The States are often to blame for blasting their arctic storms across the Atlantic to Ireland. However, early 2015 also sees the freshly harvested US hops hitting Ireland’s shores. For Polar Vortex we are showcasing Cascade, a truly classic aromatic hop, which kicked off the hop-forward IPA movement on the West Coast of America.
Distinctive Cascade floral and citrus flavours are complemented by Simcoe’s pine and tangerine notes, brightened with Citra’s tropical fruits. It’ll take the chill off.

Malt: Irish pale malt, Cara Aroma malt, Carapils
Hops: Cascade, Simcoe, Citra
Strength: 5.8% ABV
Bitterness: 59 IBUs
Tasting notes
Colour/appearance: deep gold, a little darker and with more body than most IPAs.
Aroma: upfront pine and resin aroma.
Flavour: classic Cascade pine flavour, tangerine and passion fruit from the Simcoe with Citra contributing some bright mango notes.
Aftertaste: a medium bodied IPA with lingering, humming bitterness.
Food pairings: anything smoked would pair beautifully with these pine flavours – try it with a salad of Goatstbridge smoked trout or a pasta dish made with Frank Hederman’s smoked mackerel. Knockanore Oakwood Smoked semi-soft cheese or Gubbeen’s smoked cheese are also worth checking out with Polar Vortex. Our favourite pairing? Fry some beef tongue in duck confit fat and see those flavours sing. |
