This is the first batch of beer brewed at Little Fish. It’s always been our mission to brew with local ingredients, and that’s where this beer starts: a saison brewed with one third organic Ohio spelt, and organic malts. Then we aged it with wild yeasts in oak chardonnay wine barrels. This process has added layers of fruitiness and funk that are worth savoring and pondering. These flavors should continue to change and develop if stored at cellar temperature for up to 2 years.

Pair with a range of lighter foods, including grilled fish, pork, and seasonal vegetables. Serve at 45-50 degrees F in a tulip or wine glass.
