Parent Tags: YEAST DOMINANT - WILD ALE - ALE
For beers labeled as being fermented entirely with Brettanomyces. Brett does not cause sour flavors however sourness may be observed when beers are inoculated with or infected by acid-producing bacteria. Light fruit characteristics. A longer lasting hop aroma and flavor due to Brett's ability to constantly metabolize micro-oxygenation. Initially subdued "horsey", "funky", "barnyardy" flavors. Perceived bitterness may be quite a bit lower than the same wort fermented with a clean ale yeast. Note: Not considered as a Mixed Fermentation.
