A spice, more precisely, a gum oleoresin from the root of Ferula foetida and Ferula assa-foetida herbs of the celery family, native to Iran and Afghanistan. Known for its intense aroma, leading to names such as "devil's dung" in some languages, which dissipates in cooking, it acts as a savory enhancer, giving leek/onion like notes as well.
