Calvados is a French brandy distilled from apples. It has a significant apple scent, but in flavor is delicate, with apple notes that combine well with the traditional wood and caramel flavors that come from oak aging. It’s produced in the lower part of the Normandy region. To qualify as Calvados, rather than eau-de-vie, it must be aged in oak for a minimum of 2 years.
