Sour mashing introduces the Lactobacillus bacteria during the mash itself where it will transform some of the sugars to generate lactic acid which provides a tartness taste similar of an unsweetened yogurt, without the funkiness of Traditional Sour Beers. The biggest advantage of Sour Mashing over Kettle Souring is that you can blend with sour mash.
