Our fourth wild ale is our first with a fruit component. Benedictum was inspired by the brown ales of Flanders. The primary fermentation was accomplished by our house ale yeast. The beer was then racked to barrels and inoculated with a mixed culture of wild yeast and bacteria to finish the job. Toffee notes are balanced by fruitiness and a pronounced acidity. Tart cherries add a further layer of complexity to this very drinkable sour ale.
