This Shitake beer was created in collaboration with the 2013 Age Good Food Guide Chef of the year Michael Ryan. As part of the Sydney Beer Week, Michael was invited to create a beer that reflects his kitchen and cooking. He jumped at the chance to bring his Japanese influenced cuisine less than 500m down the road to our brewery. 10kg of dried Shitake mushrooms were included in the recipe of this otherwise basic Golden Ale. The mushrooms were included in the mash and the boil along with 5kg being used in a process we call dry shrooming.
