Each time we make this ale we pick a different single variety of hops and use them exclusively in the brew. The malt bill stays fairly consistent from batch to batch so as to allow the distinctive hop flavors to come through. Here are just a few of the hops used in the past: Simcoe, Vanguard, Sterling, YCR-004, Amarillo, Azzaca, Idaho 7 (NJ7), Satus, Santium, Tomahawk, and Columbus. Available on draft seasonally.O.G.: 1.060;50 BU’S.
