Locate on Highway 55 across from a non-descript malt, Duke’s/ Brooksville’s outside looks like a typical chain restaurant. Inside is quite nice, remnants of the old St-Sebastian I guess. with well lighted tables. Place was almost empty at 4PM, service was friendly of more or less beer knowledgeable. OK if you are in the area, but I found the beers to be a bit subpar, with loads of butterscotch. Sampler is 4 X 4 on.for 6$. Food menu is typical pubfare.

My last visit there dates back several years ago when the St-Sebastiaan brouwerij had its restaurant. The place is still the same as is the equipment. Place is very nice and clean, staff was extremely welcoming as was the owner who gave me a tour of their brew house. On the beer side, the place is doing very well providing the Brooksville area with a brewpub that has a lot of potential in an area that could be seen as a tough market for craft beers. They keep tweaking their beers and so far I am impressed by what they have to offer. Food side. You can expect the typical pub fares and I didn’t see anything on the menu that really stood out from other pubs serving good ol’ American grub. My food came out right and was tasty. I didn’t really see them make use of the beers to enhance their food menu, and I think this could be a nice addition. Overall, this is a great place that needs a the support it can get from the craft beer community. It’s great to see another brewery in Florida.

This is the brewery in the old Saint Sebastien brewery in Spring Hill, Florida. The restaurant overlooks the very nice copper brewhouse. It is the typical sports bar environment that has their homemade beer alongside macros. Their bottled selection is ok, but if they ever run out of house beer all they have are macros. The food is pretty good, the service is very attentive, although they do not know all of the nuances of beer. For the area- this place is amazing, and great knowing that Pasco/ Hernando will and can support a microbrewery.
