Connoisseur’s Choice range, No 1.
In Quadrupel Ale I have combined pale, crystal and chocolate malts with Centennial, Hallertauer and Aurora hops. Fermented with three strains of yeast then matured on fresh Simcoe hops for a month at -1 degreesC, it is then seeded with a fourth yeast strain for bottle conditioning. Transcending beer styles, Quadrupel Ale is dark ruby in colour and boasts an aroma of perfumed alcoholic fruit. In the mouth a full bittersweet fruitiness leads to a warming alcoholic finish. Quadrupel Ale is best suited to pairing with mature cheeses and rich chocolate desserts.

Bottle at home in London - picked up at Kris Wines way back when. Vintage 2011. Pours clear, amber-ruby with a small, creamy off-white head. Nice aroma, with loads of ripe, aged berries, some oxidation, caramel, figs, faint metal, dates. Medium to heavy sweet flavour, with lots of gooey dates, some earthy bitterness, grape, molasses, fruitcake. Full bodied with fine to average carbonation. Warming and lightly sticky on the finish, with lots of brown sugar, molasses, liquefied berries, more dates, figs, touches of burnt wood, grass, earth, more fruitcake, caramelly oxidation. Pretty big, boosty stuff. Has some interesting nuance, but overall it’s a bit too sweet and simple.

Aroma: dark fruits, intense caramel, some light alcohol. Appearance: hazy brown, small, creamy, beige head. Taste: medium sweet. Palate: sweets continue, massive malts, dark fruits again, soft carbonation, turns quite dry and slightly bitter in the finish. Overall: quite a nice Quadrupel, not at a top, but nice still. Bottle at CBR2015, Shoreditch.

Opaque brown beer. small cream colour head. Smooth semi dry palate. Mild fine carbonation. Sweetish caramelly malts. Mild spice. Trace of tea. Mellow tangy fruits. Light semi dry finish. Hangs together well enough.

hohops (2386) - Kent, ENGLAND - MAY 29, 2014
Appearance- very dark ruby, almost mahogany, not much light coming through. Half a finger beige head which dissipates slowly. Aroma- dark fruits- cherry, plum, and raisin. Brown sugar, a bit of banana, caramel, port, some booze. Taste- lots of dark fruits, especially cherries. Bitter orange, vinous, a bit of sugary sweetness, alcohol warmth at the end. Relatively short finish. Quite juicy in the mouth, not as full bodied as expected. A little disappointing considering the look and smell, but still nice.

Clear redbrown colour, white head. Ara of caramel, raisins, honey, dried dark fruits, dates. Sweet flavour, brown sugar, golden sultanas, caramel. Sweet finish, caramel, loads of dried fruits, lingering liquorice (drop).

Bottle @ home shared with Martinus. Superb nice dark amber to red-brown color, medium sized a bit fizzy, fair lacing, beige head. Aroma is malts, sweetish, slightly alcohol, some overripe fruits. Taste malts, sweetish, dark fruits, some alcohol. Medium body and carbonation.

330ml bottle from the brewery online shop. Pours dark brown with a long lived beige head. Rich toffee and prune aroma, raisins and burnt sugar. Taste is light sweet, nice bitter tickle. Full bodied, light boozy, cakey finish. Lovely.

Small glass served with the chocolate and ale cake at the hand and flowers. Aroma is sweet candy sugar, toffee and dried fruit, raisin. Stocky viscous golden copper coloured pour with no head. Flavour is sweet caramel burnt sugar and candy apple. Noticeable alcohol, dried fruit. Palate is sticky sweet with alcohol in the mouth.

Bottle from the brewery. Pours dark ruby with no head, but enough carbonation. Sour cherry aroma. Flavours of vanilla, salted caramel, bit of liquorice, sherry-like finish. I’m really enjoying this one.

caramel, toast, roasty, licorice, aromas, red, brown, black, hazy, with no head, its a really sweet malty taste, a bit too much for me i think with a quite sour after taste, this is quite an old bottle to be honest so my review maybe offset by that i won it in a charity raffle!
