COMMERCIAL DESCRIPTION
Brewed with wild yeast and bacteria. Fermented and aged 4 years ins a single oak foudre.

FV 13 marks our first venture into the world of foudre beers. Foudres are giant oak tanks used for aging (this one holds 2700 gallons.) FV 13 is a blend of wild yeast and bacteria, a base beer with lots of malt character, and about four years of patience. The finished beer is copper in color, with an aroma of cherries and caramel. The flavor is a blend of sweet and tart, with notes of fruit and caramelized sugar. The full mouthfeel gives way to a tart, mouth drying finish.

UPDATED: APR 6, 2019 Seriously sublime. A tangy, carbonated wash of apricot and sour plum with fresh tangerine. Even a notion of cherry. Pours golden with good head and lacing. Finishes with perfect tang and some soft bubbly tinges of fruit that stay with you well after drinking. This beer is something else. Tap at Churchkey

Draft at brewery. Pours golden with a white head. Leaves a fair amount of lacing. Tart on the nose and tongue with big wood and cherry notes as well. Finished with some tartness as well.

Bottle in Feb. 2018. Light brown magenta, low carb. Nose is light balsamic VA, red fruit. Taste is sour and lightly acetic. Flavor has a lot of tart red fruit, mostly cherry, light balsamic vinegar, so slight oxidation. Great balance and this has held up really well. Very smooth and enjoyable.

ABC Roxy Benefit: Poured a murky to clearing golden. Aroma was funky, vinegar, fruit. Taste is very tart tangy cherries, sour lingers with some oak woodsiness.

From notes. Enjoyed at a tasting at Corbet’s house on June 26. 375 mL bottle. The pour is a darker golden orange color with a thin ring of a light gray colored head and no lace as it recedes. The aroma is surprisingly bland. There is a strong funk to it with some barnyard and a light apple and touch of citrus. The vinegar is big on the back end. The flavor is much of the same. Heavy vinegar, strong funk, some barnyard, and some citrus and a heavy woodiness. It’s just not my thing. The mouth feel is medium bodied and a little syrupy with a pretty strong alcohol and funk on the back end that lingers. This isn’t that great. Ugh. 6 4 6 4 14

2012 375ml bottle. Pours a hazy dark copper orange color and topped by a small off white head of foam that settles quickly to a thin film. The aroma shows notes of soured dark fruits, a decent amount of funk, lactic sourness, old oaky tannins, musty, earthy notes, and some caramel malts sweetness to balance things out. The flavor follows with the dark fruits of cherries and apples emerging up front followed by the earthy, musty yeast, some lactic sourness that is funky and slightly acetic followed by old oak, and some soft caramel malts to add a touch of sweetness. Medium bodied with ample carbonation that leads to a lengthy dark fruit and funky lactic sour finish. Well balanced sour with the old, funky oak and dark fruit balancing out the lactic sourness. This has developed nicely over the years and mellowed out from when I had a fresh bottle.

375ml bottle pours a golden color with a bit of head. Nice sour funk aroma wafts from the glass. Nice sour/funk balance to taste. Some stone fruit come through. Aftertaste is a little odd.
