375ml bottle poured into a Hill Farmstead oversized wine glass.
A~ dark glowing copper, orange, a little red in there as well. not too much head and no lacing at all.
S~ lemony tartness up front and lots of pineapple. smells strongly like Juicy. all followed by saison bready yeast, black pepper, and coriander.
T~ everyone of the blended brews comes out here with lots of complexity yet very balanced. Juicy seems to be the most present, lots of pineapple and citrus. Amber malts and peppery saison yeast from Sankt Hans, nice wheat hints from Flora and Clara and also tons of wine barrel funk from Juicy and Flora. this beer goes a long way! something different comes out with every sip. delicious!
M~ nicely carbonated, not as carbonated as most HF brews but not bad once so ever. very smooth and keeps the pineapple juice feel like Juicy.
O~ every time i’m amazed with the complexity and balance that HF always seem to achieve. if you like a complex, fruity, should i say "perfect" saison you’ll wanna give this a try lol definitely worth seeking out! i can’t wait for the 7th of the series with their "favorite lambics" i wonder if thats literally pours from bottles/kegs or just dregs.

Lovely, deep copper-amber body readily shows the SanktHans in solution. Big white head atop is very well-retained. Great clarity to the beer, as well.
For how disappointing the bottle of CD5 was a week prior to this, I was very happy to find a vivacious nose alive with lush grains and a wonderful, bright balance of bacteria and yeast. No heavy wood/wine influence here though some acidity is present. Strong honey tending lightly caramel-like balances everything, while nicely reserved funk slowly, inevitably takes over, with breathing/warming.
Baguette-like malt qualities open up the flavor, joined immediately by a bright fruitiness of nectarine, pineapple, cherry and apple. Can definitely taste a lot of the Sankt Hans, though it’s lighter, fruitier and obviously with the addition of funky yeast and bacteria. Very low tannin and just some light oak for good measure, with a malty but well-attenuated texture as one expects from HF. Light citrus and plentiful lactic notes keep it crisp and drinkable. Fantastically creamy, tight carbonation and no alcohol or flaw.
thepatrickman (1503) - Lewes, East Sussex, ENGLAND - MAY 9, 2016On site at Hill Farmstead last week. One incredible beer. It’s pretty mellow, and all of the flavors have melded together really well. There’s some light acidity, but this is far more funky than sour. Really this is just waves of pure "Hill Farmstead Brett funk aroma". Exceptionally good.

App: cloudy golden, medium head, not much retention, good lacing. Taste and palate: medium body, soft carbonation, moderate tart dry acidity a tad astringent and sweet finish. Overall: pretty good. Really dry and fruity. Sweetness helps balance the acidity and dryness.
MacBoost (2074) - Rochester, New York, USA - MAY 4, 2016Vintage offering, 375ml bottle at Hill Farmstead, $25. Pours a clear, dark gold with a generous head. Aroma of wine, tart citrus, oak. Taste is moderately tart. Some vinous notes, but no dark fruit. Medium mouthfeel. Very dry. Mind = blown. Guess you have to be at HF to really understand this one...
