COMMERCIAL DESCRIPTION
When an institution like Triple Rock Brewery in Berkeley asks you to collaborate, you don’t say no. We first brewed Cellarman at Triple Rock for SF Beer Week 2013 with the understanding that we’d make it again at SARA and age it in wine barrels. What you hold is this second version. Cellarman pays hommage to those often-overlooked supporting brewers without whom, nothing would get done. Bright, citrusy, and tart with a dry finish, this saison celebrates cooperation, friendship, and hard work. Sante!

UPDATED: DEC 26, 2023 Bottle at Grain Trust homebrew meeting. hazy golden color, clean Brett aroma, acidity is nicely low. Lots of apricot flavor. Easy to drink. Well done. 4.2

Ratman197 (24646) - Denver, Colorado, USA - AUG 23, 2023
UPDATED: AUG 23, 2023 750 ml. bottle poured a clear yellow with a small lasting white head. Aromas of straw, funk, lemon zest and light oak. Palate was light bodied and crisp with a dry finish. Flavors of straw, grapefruit, lemon zest and light oak with a crisp dry lingering citrus finish.

UPDATED: APR 11, 2023 Draft. Amber beer with a cream head. Sour aroma. Sour and light herbal flavor with citrus. Medium bodied. Sourness and oak lingerwith citrus.

UPDATED: JAN 3, 2023 Bottle: Poured a blonde color ale with a large white foamy head with good retention and light lacing. Aroma of tart notes with some funky Brett notes and light vinous notes. Taste is a mix of tart notes with some funky Brett notes and a vinous finish with light oak. Body is about average for style with good carbonation and no perceptible alcohol. Enjoyable saison with a nice level of complexity.

UPDATED: DEC 10, 2022 A hazed blonde ale with a thin lacing white head. In aroma, sweet fruity malt with light Brett, light lactic notes, light cereals, light fruity esters, pleasant. In mouth, a nice sweet fruity malt with light lemony notes, light cereals, pleasant.

UPDATED: AUG 26, 2021 A 750ml bottle, with no bottled on or best before date (although I’m pretty sure it’s either B1 or B2). Poured into a Tilquin stemmed glass. It was a hazy golden colour with a one finger white head that dissipated fairly quickly to a ring around the glass, while leaving some lacing. Aromas funky, barnyard, minerals, light tartness, tropical stone fruit, apricot, unripe berries, green apple, citrus, grapefruit, lemon peel, oak, a touch of grains, with slight pepper notes. Tastes tart, tropical and citrus fruity, grapefruit, apricot, green apple, light funk, oak, vinous, with a lightly spicy finish. Medium bodied with moderate carbonation. Overall, unfortunately, I haven’t had the opportunity to try it fresh, but this bottle having aged 6 / 7 years, has aged gracefully with wonderful complex yet balanced aroma and flavours.

UPDATED: JUN 20, 2021 On tap at SARA, pours a hazy golden with a large white head. Nose is full of wild yeast, gentle funk, rustic saison yeast, and a little oak. Flavour expresses a remarkable depth of saison yeast and wild bugs working together, with gently tart citrus, and a woody oaky character that adds another lovely dimension. Deep and complex, with everything working beautifully together. Lovely.

[ As Sante Adairius / Triple Rock Cellarman Barrel-Aged Saison ].
ABV: 6.5%. Clear medium yellow colour with a small to average, frothy, good lacing, mostly lasting, white to off-white head. Aroma is moderate malty, wheat, moderate yeasty, citrus, yeast, minerals, herbs, barrel, light salty. Flavor is moderate to light heavy sweet with a long duration, wheat, minerals, citrus, grapes, yeast, barrels, light peppery, oak notes. Body is medium, texture is oily to watery, carbonation is soft. [20190615]

UPDATED: NOV 22, 2019 750ml bottle. Stonefruity, mineraly and oaky with some farmyardy yeastiness, woody notes, citrus, grapefruit and peachy fruity notes. Quite nicely balanced and complex.
