COMMERCIAL DESCRIPTION
A foudre aged grisette, brewed with a large quantity of both raw and malted wheat, and aged for many months with a mixed culture of Brett and Lacto in one of our foudres. Misère (mee-zair) was then refermented in the bottle with Brett and allowed to condition for three months. This grisette is nicely tart, dry, and funky. Definitely our best batch of grisette to date.

Hazy, blonde, with a thin head. Has a light yeast, a touch of brett, touch of poopy pedio. The body is light, it's a bit fizzy, peachy, just a touch of brett, fairly yeasty, and definitely some tartness as well. Quite refreshing, with a light bit of wheaty goodness. I guess for me I'm not getting much woody character either. Solid.

750mL bottle, pours a hazy blonde with a small white head. Aroma brings out light brett, oak, and toasted grains. Flavour is fairly complex, with toasted grains, brett, oak, and wild yeast. Very nice expression of the wild yeast, with a toasted, bretty, oaky finish. Excellent.

On tap @ Holy Mountain. Cloudy yellow beer with a tall white head. Has a nice, almost lemon meringue type quality to it. Fairly grain forward. Not even so much the typical bread or toast notes. Subtle hop character of flowers, grass, and nondescript herbs. Good tartness to it. Particularly lemony, in fact. Has some more subtle fruit aromas that I can't pick out and name, but give it something interesting. Good beer all around.

750ml bottle pours a muddy yellow with some sticky, white head. Nose is cool, dried citrus peel, floral notes, potpourri, a little diaper, some lemon curd on the verge of going bad. Flavor has apricots, under ripe stone fruit, straw, funk, light wood, light grist. Finishes dry, funky. Well done.

Thanks to Matt for this brew!
