Voici un travail très intéressant provenant d'un assemblage de Zinnebir ayant vieilli 9 mois en fut et d'un lambic. Moi qui suis un pourfendeur de l'acidité dans la bière, j'ai su apprécier cette alliance qui permet aux arômes d'un Lambic de s'exprimer tout en ayant son acidité nettement maîtrisée. J'urais simplement apprécié un alcool un peu plus robuste qui aurait mieux soutenu l'ensemble. En verre, nous sommes sur un bel ambré avec une mousse quasi inexistante cependant. Le nez est tourné sur le lambic mais avec une acidité retenu. Ainsi arômes de vinaigre, de pomme, de fut et de caramel prédominent. A la dégustation nous retrouvons ces arômes avec une astringence certaine et une côté fermier. Nous ne sommes pas loin du cidre fermier par instant par la présence du Brett. L'attaque et la seconde bouche sont bien équilibrées, la seconde étant même assez douce. L'arrière bouche cependant est encore marquée par l'acidité et manque d'ampleur. Le final, terreux et astringent monte à la fois sur l'amertume et légèrement sur l'acidité pour une longueur acceptable. La complexité est assez bonne et l'ensemble très rafraîchissant, et donc parfait pour un temps d'été. Belle prestation.

(old rating, 03/2012) Light yellow colored beer with a good white head. Aroma is soft sour, citrus, wood, hay. Soft fruity sour taste, with a hint of vanilla/wood. I’m not a big fan of sour beers, but this one I really enjoyed.

Head: small, foamy, off white
Colour: Hazy yellowish
Smell: lots of wheats, some cellar funk, citric, little dusty malts
Taste: medium and bitter sourness level, with nice dose of wheats and coriander, also some yeast and citric notes and zesty bitterness in the end, very very nice and well aged !

750 ml bottle - Thank you Jean Hummler! - sampled during a vertical DL tasting at the cellar of Chez Moeder Lambic Saint-Gilles - Great place! - offered by the bar owner - Pours hazy yellow with no head. Nose = funky, wheat, citrus peel. Conserved very well, body still very light & crisp. Taste of lemon zest and tad of yeast and malt. Incredible beer.

HUGE thanks to joes for hooking me up with this bottle at Borefts 2012! Hazy golden orange pour with a big white head. Nose is musty, funky, and lemony. Nice peach, apricot, and apple fruit notes. Oak, grass, and a hint of green grape. The flavor is nicely tart and very fruity. Big musty funk, lots of peach, apricot, and grape. Oak, grass, and plenty of lemon.

Bottle courtesy of ggaughan, thank you sir! Cloudy yellow color, huge white head, but NOT a gusher. Aroma of peach, grapefruit. Taste is softly sour fruit, cutrus, subtle banana, grape. Nice complexity. Hi carbonation.

Aged version, stored in cellar for about 4 years
Golden colour, white head, initially firm but diminishing later. Tart geuze aroma, silage, horses, malts, light fruity wine notes. Tart flavour, fruity, wheat, light oak and wood notes. Tart finish, quite astringent, very dry. Lovely and balanced.

75cl bottle @ ZZT III courtesy of Joes. (+-4 years old, stored upright in dark cellar) Slightly unclear yellow / golden color, big white head that lasts for a couple of minutes. Smell sour, hay, cardboard. Tastes incredibly balanced, very balanced sourness, some fruityness as well. Very very good. Suitable medium carbo, medium body. Superb!

Bottle thx to joes@zzt3. Clear pale yellow colour with a big white head. Smells sour, sharp, wine and wood. Tastes sour, wood, lambic, fresh. Takes a few sips to get used to. Palate is dry, long lasting taste, good carbo.

This beer is Zinnebir aged in oak for 9 months with lambic added. I just purchased this bottle today and the shop owner told me that it should be put in the fridge and handled gently due to the addition of lambic in the cask or something along those lines. The bottle was 75cl and sealed with a cap and cork. As soon as I yanked out the cork I was greeted with a rush of foam and beer. I tried not to lose too much but a few ounces got out on me. I handled it gently and cooled it but it still got crazy. The beer poured a cloudy golden color with a very thick and almost soapy looking head. The head lasted and lasted and gave off some great solid lacing. The aroma of the beer is funky with citrus notes going on, earthy. The taste is refreshing and citrusy. I get notes of orange, lemon and after awhile some pineapple, very pleasing. The body is full as well, almost has a champagne like body and carbonation composition. There are some vineous notes in there but the lambic tartness, not too tart, is the real treat in this beer. Pleasant suprise.
