Alligator Knucklehead ESB
On tap @ Tall Paul’s. Amber in color with a thin layer of khaki foam. Pretty decent bread and toasted malts on the nose. Same sort of sweet and substantial malt profile on the tongue. Definitely more bitter than I’d expect… It’s also not really the kind of hop profile you would think of for a British style of beer, but it’s fine.

Alligator Tailgator Pale
On tap @ Tall Paul’s. Almost amber in color with a finger of white foam and a fair amount of haze. Some sweet melon and orange hop character, but a sort of husky and apple peel bitterness to the finish. Sweet bread, toast, and caramel malts as well. Not a big fan of this one as it is sort of on the harsh and astringent side.

Alligator White Widow Witbier
On tap @ Tall Paul’s. Hazed light orange in color with white foam. NIce enough wheat bread and crackers. Slight lemon peel and orange. A little bit on the tangy side, which I guess I could do without, but it’s fine. Subtle white pepper and coriander spice. Sort of seltzery on the tongue. It’s fine, like most of the stuff I tried.

Alligator Haute Mess Floridaweiss
On tap @ Tall Paul’s. Reddish-pink colored beer with a small, light pink head. Aromas of lemon, tea, and tangy berry. Definitely some pomegranate character. Quite acidic and sour--lots of green grape, yogurt, and lemon juice. A hint of grass, slight cracker malt, and mild wheat bread flavor and sweetness.

Alligator Devil's Millhopper
On tap @ Tall Paul’s. Murky orange/amber colored beer with a tall khaki head. Bitter woody and grassy hops dominate. A fair bit of sweet caramel and toasty malt. It does have at least some citrus hop flavor and character. There’s a hint of green apple at first, but it did clear up after the first couple sips. Kind of on the edge of what I normally don’t/do like, but it works alright I guess.

Alligator Habanero Smoked Ale
4/25/15. On tap at Tall Paul’s. One of the better beers of this particular visit. Golden pour with a nice khaki head, good lacing. Nice aroma, light chipotle pepper, spice, malty, honey. Good flavor, hear and smoke there, but not overwhelming at all (for me at least), mixes well with maltiness and a honey aspect. Tasty.

Alligator Chaos (403) Smoked Porter
4/25/15. On tap at Tall Paul’s. Almost black pour with a small tan head, great lacing. Looks good, but that’s where it ends. I was pleasantly surprised by this little brewery but this one was bad. The aroma was peat, Scotch, burnt plastic, and band-aids - definitely the wrong kind of smoke. Smoked meat in the flavor, campfire, Scotch, burnt plastic. Not good.

4/25/15. On tap at Tall Paul’s. Brown pour with a small tan head, mild lacing. Earthy aroma, lightly nutty, a touch too fruity, just a little off in general. Okay flavor, lightly nutty, fruity, earthy, soil, wet Cheerios. Meh.

4/25/15. On tap at the brewpub/bar/whatever it is. Orange pour with a small khaki head. Nice aroma, was surprised by this brewery in general - loads of citrus, some tropical, dank, not too much sweet malts mucking it up. Good flavor, mild bitterness, citrus, light caramel and crackers. Tasty.

4/25/15. On tap at Tall Paul’s. Lightly pink yellow pour with a small off-white head. Somewhat light/plain aroma, mildly tart and fruity. Better flavor, good tartness, hints of fruitiness, pink Starburst. Tasty!

On draft at FBG Fest 2015. Pours a hazy yellow with a white head. Nose is some nice wheaty citrus, some bread, and some tartness. Flavor is similar with bread, citrus, and tartness. Light in body and a nice berliner overall.

Alligator Chaos(403) Smoked Porter On tap at the brewpub. Pours dark and opaque with a good head. . Very, very smoky – like drinking a campfire. The aroma is better than a campfire but still brings one to mind. Feel: smooth medium body.

On tap at the brewpub. Pours very light with a tall head that quickly reduces to a thin coat. Interesting and unusual aroma has both fruit and coconut, as well as a floral aspect. Lightly sweet. Feel: very smooth and manages to coat th mouth nicely despite the thin body.

Alligator Chocolate Squirrel Wrangler Nut Brown Ale
On tap at the brewpub; sampled back-to=back with the regular version. Pours murky brown with a fine, durable head that leaves sticky lacing. Aroma: nutty with toffee and a hint of something undesirable. Flavor: lightly sweet up front; a faint bitterness in the aftertaste. Nutty and malty flavors with only a faint hint of cacao nibs, but this renders this better tasting and modestly more interesting than the regular version. Feel: smooth but seems a bit too thin.

Black pour with tan head and lace. Aroma is dominated by rich coffee and roasted malt. A flavor dominated by coffee as well with the roasted malt some sour cherry like flavors and a touch of chocolate and vegetable twang at the end. Medium bodied and a tad fizzy for me. ok

A very, very solid nutty brown ale. Exactly what I’d hope for and expect from a beer with this name, lightly sweet, very nutty (but not aggressively peanuty like those PB beers that are all the range). Nice offering.

Alligator Habanero Smoked Ale
Draft at Tall Paul’s. A totally insane beer. The habanero and smokiness are off the charts and register really well in the nose, but when they hit the tongue you’re reminded that these smoky and spicy things are quite a pain in the ass once they’re in your mouth. An impressive achievement and the flavors are pretty good for what it is, but I’m not reaching for another.

Clear, rusty honey gold. Fluffy white head. Lightly smoked, cereal malt aroma. Holy cats this is spicy. This is one of those cases where you’ve got quality ingredients and good craft, but I don’t want more than a sample. Peppery rauchbier, this is. Growler generously shared by jcwattsrugger. Cheers, John! Pours a hazy yellow with a white head. Nose is huge ginger, lemon, herbs, pickled ginger, citrus, and lemongrass. Flavor is similar- ginger, lemon, herbs, and lemongrass with lemon notes. As a beer, this one is a great ginger beer. As a Berliner, not so much a Berliner. Light in body and pretty drinkable ginger beer overall.

On draft at Brewer’s Ball 2013. Pours a medium porter brown with an off-white head. Nose is roasted malt, dark chocolate, black coffee, and earthy bitterness. Flavor is similar with roasted malts, dark chocolate, coffee bitterness and an earthy bitter bite in the finish. Roasty and earthy, a nice porter overall.
