not sure how their naming system works but this is definitely a different beer than the old Montem. light yellow color, this saison is generously hopped and comes in a can. Really it's pretty enjoyable. tingly and tasty.

Propolis Fir
Can. Nose of, unsurprisingly, orange, fir, and just a bit of funk. It's a thin, easy drinking beer that has its strange elements — the fir is odd but prudently understated — and any wildness is dialed way back. IT's almost a lawnmower beer, but like a crazy interesting one. TBH I really quite like this.

On cask at Propolis, pours black with a medium beige head. Aroma brings out earthy roast and some fungal notes. Flavour is lightly tart, with a soft earthy malt character, light cognac, and some nuttiness. Unusual but intriguing.

On tap at Propolis, pours a deep dark brown with a medium beige head. Aroma is intense on the sage, drowning out any other element. Flavour is very dry, earthy and spicy, with a very dry—almost bone dry—palate of sage and earthiness. Not bad but the complexity is drowned out by the base beer. Meh.

On tap at Propolis, pours a deep dark reddish brown with a small beige head. Aroma brings out a complex red wine barrel character, with balsamic, and some lightly tart berry character. Flavour has a nice red wine character, with plenty of wood, light balsamic, and tart berries. Nicely vinous and woody, but there could be better integration and depth. Good.

On tap at Propolis, pours black with a medium tan head. Aroma brings out hearty dry oats and a touch of vanilla — I don’t get the chicory or dandelion though. Flavour is dry and hearty, with a nice dry oatiness and a hint of vanilla. Again, I don’t taste the adjuncts. Clean and drinkable, just nothing all that special.

On tap at Propolis, pours a clear golden with a medium white head. Aroma is infected, with lots of burnt rubber, subdued pumpkin, and rustic saison yeast. Flavour is messed up too, with lots of phenolic burnt rubber notes. Totally undrinkable. The brewery insists this is how it’s supposed to be, which leads me to believe they don’t know what they’re doing or talking about. Poor.

On tap at Propolis, pours a hazy golden with a small white head. Aroma brings out delicate white wine barrels, solid gooseberries, and some rustic notes. Flavour is nicely complex, with lots of white wine and gooseberry notes, a touch of wildness, and a nice rustic character. Very nice stuff.

On tap at Propolis, pours a cloudy dark orange with a large white head. Aroma brings out earthy notes, farmhouse rustic yeast, and light floral notes. Flavour is earthy and floral, with a decent earthy rye character, some lightly sweet spiciness, and gentle floral character. Pleasant.

Propolis Oat
16 oz can poured, picked up at Elizabeth Station. Dense chocolate, coffee brown pour, thin bubble head that fades rather quickly. Really interesting brew all around here. Aroma has notes of licorice, chocolate, some caramel, and a rich indicator. Flavor finds it more bold than rich. Robust background with a cool licorice, chocolate, dark fruit hints, and a touch of root beer in the late palate. Long lingering flavor here, and a nice creaminess and full mouthfeel to this stout. Very intriguing flavor, and an easy one to drink. Totally on board with this unique treat.

375mL bottle, pours a clear golden with a small white head. Nose is very buggy, with lots of barnyard funk, rustic saison yeast, gentle tartness, oak, and some lemon rind. Flavour is tart and complex, with rustic saison yeast, lemon rind, oak, and some bugginess. Not really noticing the cognac, but I do get plenty of oak. Buggy, grainy, tart finish. Very interesting and quite enjoyable, but shy of excellent.

Opaque, yellow, big thick head. Some floral notes, herbaceous hops with a bit of citrus accent. Decent body. Mild bitterness. The malts are thick, and there's a bit of wheat acidity as well. The hop aromatics - which aren't a ton to begin with - disappear on the palate. I suppose it's intended as an easy drinker.

500 mL bottle at Kevens. A cloudy, golden yellow pour, thick foam head. Moderately tart, floral notes with some pear linger, light straw grain under the wild character. Cool, smooth and easy drinking. Late reminder of more pear, some white grape, tart mixed fruit, more floral notes. A really unique brew. Fun, tasty brew.

Propolis Oat
Pours very dark brown and looks almost still as it pours into the glass, but a small head appears and disappears quickly. One in the glass it looks almost black. Aroma of chocolate and coffee. Aroma is light but pleasant. Flavors of chicory, bitter chocolate, and dirt. This is fairly dry and without much sweetness. Despite its still appearance it is a bit fuzzy in the mouth, and more so than I would like for this flavor. Maybe let this one sit in the glass for a bit before drinking. Interesting idea and pretty tasty outcome.

Attack: crisp creamy full Mids: sour, orange citrus malt, wheaty airy malt, lvl4-sweetness Finish: coriander, wheat malt exhale Overall: full flavoured and full textured. Not sure all the advertised flavours are there like clove and fennel, but definitely orange citrusy.

Propolis Prunus (11/13)
Acquired at La Bodega from Riverside, California for $13.99, Prunus 2018 is a Flemish-style dark ale aged in a Grenache vat with black cherries crafted by Propolis Brewing from Port Townsend, Washington. The air yields Grenache wine, cherries, chocolate, and an underlying funk are noted as you drink. The appearance is a dark mahogany that pours a finger of beige head. When held up to light, a reddish brown unveils. The alcohol content is 7.5%. Toffee is creamy to the mouthfeel. Grenache wine fills the complexion followed by black cherry tint and tart. Anise spices the take and accompanies the tart. Chocolate compliments and deepens the Grenache and black berry body. Figs are distinguished with the chocolate tone. Plums are felt with the toffee and chocolate combination. Brettanomyces yeast lightly funks the body and dries the finish while bringing out raisins on the mouthfeel. Oak adds a woodsy touch to the chocolate, black cherry, and Grenache frame. Prunus 2018 is a delectable Flemish-style dark ale. The Grenache wine, black cherries, chocolate, toffee, plums, figs, and raisins blend together into a remarkable craft beer. The chocolate and toffee is savory, and welcomes the Grenache and black cherry notes. The Grenache wine style, black cherry tart, and anise provides a unique experience upon the take. As the beer warms, the chocolate, figs, and plums become more prominent. I treasured drinking this beer and dazzled by its depth and complexity. Propolis Flemish-Style Pale Ale (2018 Barrel Series)
Capped & corked 375 from Bine & Vine. Pours bright coppery gold with a creamy white head. Aroma is slightly tart wine and wood. Med body. Flavor is very woody in a slightly musty way; red wine and something like a fresh kumquat - rind and all. Oh, and it is very tart - verging on sour. My first impression was BFM, but it's only about 10% of one of those very sour ales. It settles the taste buds very quickly, so it's quite a pleasant drink.

10 oz at Asbury. Light cloudy orange with a tall white head. The aroma is funky and complex with layers of grain, pineapple, straw, pepper. It's really promising. The body is light and lively. Excellent fruity hints are balanced by multigrain bread and spices. This is an excellent saison. I'm surprised at the overall lightness of the mouth, but it certainly suits the beer.

Nose is like rolling in a dandelion patch, floral with honey and patchouli, there's an earthy note too like top soil, straw, herbs, lemon juice. Flavor has some grist and stale bread, flower petals, lemon, lavender, cheese cloth. Finishes dry, herbal. Aged well.

Delighted that Propolis is now bottling in 375s, though this one I would have been happy to have in a 750. Hazy gold pour, lovely nose with honey and light herbs, hinting at what might be a sour saison but turns out not to really be. Lovely yeast, gently herbal, not acidic but still lemony. Charming beer.

Light amber yellow. Nose is red fruit, some earthy brett. Taste is lightly sour, really nice mouthfeel, Flavors of light wine barrel, tart light red fruit. Really enjoyable and balanced. Don't really know what a salmon berry is and don't get the elderflowers, but I probably sat on this too long.
