LARK on the Park to Host Pairdiné with Margerum Winery

LARK on the Park will host a five-course Pairdiné featuring Margerum Winery Tuesday, March 25 at 7 p.m. at its 2015 Woodall Rodgers Fwy. location across from Klyde Warren Park.

This will be the first wine dinner hosted by LARK, and the event will feature selections from Margerum Winery of Santa Barbara, Calif. Owner and director of winemaking, Doug Margerum, will be in attendance to discuss the wines throughout the dinner.

The evening will begin with a Margerum Pinot Grigio as the starter wine, followed by the below menu and pairings:
• First Course
o House-made ricotta tart with fromage blanc, green garlic and mint
o Paired with 2012 Margerum Klickitat Pinot Gris
• Second Course
o Grilled asparagus with tangerine aioli, bottarga and breadcrumbs
o Paired with 2012 Margerum Sybarite Sauvignon Blanc
• Third Course
o Point Reyes Tome and original blue with arugula, aged balsamic, rhubarb-strawberry compote and baguette
o Paired with 2012 Margerum Riviera Rosé
• Fourth Course
o Grenache braised oxtail with spaetzle and pea tendrils
o Paired with 2011 Margerum M5 Rhone Blend
• Fifth Course
o Grilled American Kobe skirt steak with blue cheese butter, fingerling potatoes, bacon lardons, crème fraîche and chives
o Paired with a 2009 Margerum Syrah

Dinner will conclude with the Margerum Amaro.
