Dextrins certainly work, but they aren’t the only option.

Lots of protein - wheat is particularly good for this.

Beta-glucans - flaked oats work, but rye is even better.

Glycerin/glycerol – a yeast byproduct, certain strains make more than others, some saison strains that finish with a low FG can leave a surprising amount of body.

Low carbonation – nothing ruins a big chewy stout like too much CO2.

Brewing some big dark beers in the next few weeks, to fill two 5 gallon barrels and hoping to employ most of these techniques.
