Now that Cellar Reserve is cancelled, I have stockpiled a few releases of CR beers and haven’t been drinking them as quickly. The oldest bottles I have are from Summer 2013 release.

I was going to drink these oldest to newest but I’m curious how CS beers age not because I want them to improve but because I’m wondering how aggressively I should drink these beers.

So my question is those of you that have recently had 2011 or 2012 CS l’Brett or Petite Sour beers, do they get more sour / acidic or do you find they don’t change too much? I don’t want the beers to get more sour so if that’s the case, I’ll drink them quicker than I am today.

thx.

In my opinion the older ones got a sulfur aroma and flavor as it warmed.

I just drank the ROYGBV series at the end of September 2014 and those beers were holding up great ! I found WWB Batch #1 to be getting a bit less fruity and more vinegar burn as it ages but considering Chad’s knowledge of brettanomyces Im assuming most should age well.
