353, rotting, as of right now... Anybody want to do a tasting in the Bay/North Bay(CA)?

Looking back, $3000 bucks would be really nice right now...sigh. Dan, why’d you get me into this shit?

FTW, I said it and I stand by it. No good can come by cellaring or hoarding.

"Oh! But you don’t get it! I’m aging my lambic to see how it develops!!! It’s so much more complex with a few years on it!!!"

No. You are letting it rot. Get off your high horse and drink your beer.

You say that now. Just wait for 5 years from now when I start unloading all my Champales in the trade forums for crazy .rar wales. You’ll be all over them!

It’s an estimate, but I’m guessing about 200-250. Slightly more than usual since lately I’ve been drinking more of the beers I really like. Two things struck me in reading all of your comments btw: 1. you guys have way too much lambics and 2. you’re keeping the beers way too long. But hey, let everyone do as they please, I don’t mind, but I’m drinking mine that’s for sure! Cheers!

Oxidation can create some really cool wine-like, vinous notes in something like a big imperial stout or barley wine. I experienced that recently in an aged Plead the 5th. It had some almost cabernet-like flavors that weren’t there in a fresher one.

Wouldn’t it be easier to just drink a Cabernet if that’s what you like?

As a result of a recent trade (haven’t received my package just yet) and some bad excuses to drink good beer, I’m down to 24.
