Ethanol can oxidize back into acetaldehyde. I’m not sure that’s the only reason or honestly even one of the reasons, but I suppose it would make some sense.

fusel alcohol break down over time and develop other compounds like esters, so beers will take less boozy over time as those fusels are the harsher alcoholic notes versus the cleaner flavor of ethanol.

Two years on Old Stock is optimal in my experience. Drink that shit now, it’s probably still wonderful.

Wait, is anti-cellering now considered cool?

I guess I was ahead of the curve years ago.

But now I’m switching back to the dark side as i have been pulling a lot more beers out of the cellar lately and really enjoying them.

I have some ’05. I’ll have to open one next year and see how it is at 10yrs and report back
