3.8 Slyboro Hidden Star Semi-Dry Cider Piss yellow pour with a short-lasting carbonation sits crystal clear in my glass. Bitter, tannic nose with short-shooting spritz recalls champagne in only the classiest way. There is a touch of sweaty aroma, almost cabbagey, that seems interesting as long as it doesn’t translate in to the taste. Drinks very crisp with a savory, musty note that counterbalances the true apple flavor. Yes, it’s a bit brussels-sprout-y, but the slight degree makes it all OK. This is a complex cider with a festive presentation that creates a satisfying experience. Probably something I would enjoy more in the warmer months, but fun and tasty overall. Taste is a bright, tangy, spicy, spirited, Applejack infused cocktail. Upfront tartness with better then decent acid. Nice & tangy. Lingering honey & bitter orange zest. Browned apples, pear-like perfume, & champagne. Taste is bittersweet. Sweet table wine, acidy apple, bitter cores, wood. Lingering bit of green grape sugary-ness. Mellow tartness. Texture-wise, this is very dry for an ice cider, which gives a sensation of heat and lack of body, but this austerity is enjoyable in it’s own way, more like a spirit than a syrupy dessert wine.
