Texas Mead Works Honey Blossom Minstrel's Mead
Bottle at BTBF. So interesting and complex. Much different than most of the meads I have had. Smells of honey comb, vanilla bean ice cream, wood chip shavings, and something else I can’t put my finger on. Got some legs. Hides the alcohol well. Not too sweet at all. Surprising in a good way.

Clear brilliant golden with an aroma like sweet sugary honey and a hint of orange zest and sweet lavender. Smooth flavor that delivers a touch of vanilla cotton candy as well as sugary honey and orange rind zest. Nice little floral touch on the finish with some marshmellow tone. Really smooth and not too boozy, complex and not just "honey", sweet but not too syrupy. Really lovely.

Dark clear copperish gold with a huge complex nose of smoked honey and caramel and blakened marshmallow. The taste is big and smokey sweet with loads of marshmallow and sticky honey with a touch of sweet char. Really sweet and complex and different.

Texas Mead Works Honey Blossom Jalapeno
Location: Sampled at the Meadery, 1/26/14

Aroma: The aroma is a nice mix of fruity sweetness and jalapeno peppery spice
Appearance: This one has a clear orange pour to it into the wine glass
Flavor: The taste is much the same, sweet, with some honey, fruit, and peppery flavors
Palate: The body is leans to the lighter side, slightly cloying, with an average carbonation
Overall Impression: I loved the gimmick quality of this one. It just struck me the right way. For me, meads aren’t my favorite, so giving it a little peppery kick seemed really just about right.

Texas Mead Works Honey Blossom Cyser
Location: Sampled at the Meadery, 1/26/14

Aroma: The nose is apple and honey, some caramel and vanilla notes
Appearance: This one has a clear orange pour to it into the wine glass
Flavor: The taste is similar, on the sweet side for sure, nice mix of components
Palate: This one had a nice enough feel, its a little sitcky/slippery on the mouth
Overall Impression: This place was about as close to home brewing as you can get and be commercial. It seems like a lot of effort went into crafting this. I’m not a mead expert, but I liked the effort.

Pours pale yellow. Aroma is straight up peach juice. The flavor is peach forward without being over the top. It’s bold in its peach flavor without being overly fruity. Light honey character persists but this one is all about the peach. A very nice mead.

Wow! This is as advertised. It’s a peach symphony led by a bee conductor at The Hive in Honeyland, TX. Nose is peach and honey, flavor is peach and honey. It’s that simple. Don’t think too much with this one. Nice and slick on the tongue. Simply delicious, and it hits the mark on every level.

Corked bottle. Pours a slick and oily amber with a nose of honeyed apple, apple strudel, and sugar icing. Flavor is fresh honey comb built and kept in an apple orchard with the resulting honey used in an apple pie. Faint pear in the finish. Lingers on the tongue and stings in a good way. Well done. Alcohol is hidden nicely. Repeat for sure.

Light yellow color with no head. The aroma is full of honey with not too much else. For the flavor I get a lot of honey, but I also get some strong floral notes. There is also a medicinal flavor which is a little off-putting.

Bottle. A deep, deep red-purple in the glass -- now you can mess with your Pinot Noir-loving friends. Nose is like getting hit in the face with a bushel of fresh raspberries. Taste -- wow. Fruity, rich, but with excellent acid and even a touch of mouth-watering astringency. Finish is clean and sunny. Just amazing.

Bottle. Pours a rich, dark purple -- could be a great way to mess with your Merlot-loving friends. Floral on the nose -- not a lot of blackberry, but still balanced. Drier than their semi-sweet, with a huge burst of fresh blackberry; finishes clean and very very long. Exceptional expression of the fruit.

Texas Mead Works Honey Blossom Apple
Bottle. Nose is candy apple, or Sidral Mundet -- definite sugared sweetness to it. Pours clean gold. I wanted more honey on the palate -- it was almost indistinguishable from a cider. As a cider, it would be exceptional; as a mead, it’s a little off the mark.

Texas Mead Works Honey Blossom Semi Sweet
Bottle. Pours with a very lightly hazed, but mostly clear, pale, straw yellow hued body with some light legs. Aromas are a bit waxy and earthy up front. Soil, floral, dirt, bitter. Mild stone fruit notes. Flavors are juicy peaches up front with a grassy, waxy and almost flint like mid with some mild hay, floral, grassy and lightly buttery finish. Lots of canned peach flavors. Still, medium viscosity, somewhat dry with a very low tannin. Not bad.
