KyotoLefty	3.8 Kozaemon Daiginjo Sake 720 ml bottle from Isetan Kyoto. Pours with a deep yellow hew, almost like a koshu. Rich, savory nose, lots of rice, some oxidation--seems a bit aged but it does not purport to be. Light raisins, lemon, maybe a touch of pineapple, but a funky one. Flavor is sweet and acidic, funky like a kimoto, rich, savory, stewed fruits, pineapple, apple, plus a hint of cedar as if it were aged very shortly in cedar casks. A slightly pink sake. The aroma has notes of rice, cedarwood, and flowers. The flavor is sweet with notes of alcohol, rice, cederwood, and hints of flowers, leading to a dry finish. L'aspetto del liquido è limpido, senza colore e trasparente. L'intensità olfattiva è elevata e la persistenza olfattiva è apprezzabile. Il gusto al naso - aroma dominante è di riso maltato Koji. Il gusto al naso - aromi secondari dona impressioni di melone, fruttato e secco. La prima impressione di intensità in bocca è di sake robusto per un gusto morbido e ricco. Il corpo è rotondo. L'intensità gustativa è normale e la persistenza gustativa è sufficiente. Il gusto è piacevole. Le sensazioni boccali finali sono di pronta beva. GT	4.2 Kozaemon Koi Yuzu Sake Taster at JAM, Kyoto, shared with KyotoLefty and biggirlpanties. Cloudy yellow pour looking like fruit juice. Aroma is out of control exquisite yuzu fruit - super bright and perfect citrus zest. Taste is super citrusy as well like fresh pressed orange juice. Sourness prevails. So good. There’s really nothing here that is sake-like. The fruit character dominates and it’s super fun. I loved it, even if that is sacrilegious. But hey, the sake experts at JAM recommended it. Medium to big sweet flavour, with notes of creamy vanilla and alcohol. Full bodied and lightly oily. Warming on the finish, creamy, with vanilla frosting, pineapple and subtle herbs. Nice.
