The aroma is mild, but nice, sweet, fruity, with a hint of Alpine slopes; intriguing. Very sweet, near the limit of syrupy, with some honey and wax flavor, but also with excellent and evident fruitiness (peach jam), and correct acidity. Not extremely complex, but dynamic and balanced. The aroma is mild, it can be associated to a couple of good German meads; some mature honey, light hints of wood, glue and alcohol. Quite sweet; it’s not sticky, and it develops an elegant vanilla backbone; some honey flavor, light caramel, warming alcohol. Elegant and with perfect balance, although not as complex as others from Therry. Sunday, June 30, 2013

It’s moderately sweet, with a good mead/honey flavor, but no discernible characteristics as others; traces of chestnut flour; marked acidity level. Comforting final alcohol. The aroma is very animal, with dark honey, buckwheat and horse stable; powerful. Sweet mead, with good honey flavor, some buckwheat honey, lingering fruitiness, pleasing warming alcohol, and light wood in the final too. Another excellent mead from Therry, potent, complex. fiulijn	4.1 Therry Hydromel au Chicon Corked bottle from the meadery, batch 0503 (?) Measured Final Gravity: 1045 Amber color. Aroma of wood, cherry liquor, light alcohol; later some dry flowers. It has a moderate sweetness; some dark honey flavor, with an evident woody character, and light fruity touch; it has the typical bitterness of the chicory that transforms this mead into a digestive, and provides a strange but balanced final. It has a delicate aroma of flowery honey, with light citrus fruits, wine, glue. Semi-sweet mouthfeel, with evident carbonation (unusual in France, but here it adds a quid), mellow honey flavor, with balancing acidity. Fresh, very good. Sunday, June 30, 2013

The aroma blends the mature honey, the wine, liquor, wood, and some fruits; intense. The mouthfeel is semi-dry, very smooth, with an immediate alcohol kick; it has a lean flavor of mead, mature honey, and soft tannins in the end. Warming, with elegance. Excellent.
