Dancing Bee The Beerded One
Bottle. Pours a dark gold with a touch of haze. The nose is hops -- mild grapefruit, herbal, and floral notes, combined with dark honey. Great earthy and mushroomy notes on the tongue, as well as herbal and hops; you can really tell this is buckwheat, and the hops serves to accentuate and frame the buckwheat nicely. Finish is long, graceful, and warm. A winner.

Bottle. Pours a medium purple-red. Great nose -- fresh blackberries and honey. Flavor is well-balanced; no candied or fake notes, just blackberries and -- you guessed it -- honey. Sometimes things are just what they appear to be, just what they should be.

Dancing Bee Semi-Dry Raspberry Mead (Melomel)
Bottle. Pours a very pretty garnet color. Nose is raspberry and honey, but remains somewhat restrained rather than blowsy or candied. Drier than I expected on the tongue, opening up savory and complex notes I didn’t expect; I wanted Gorgonzola dolce, Muenster, or some other deeply flavorful and fatty cheese. Finish is mouth-watering. Amazingly mature.

Dancing Bee Citrus Tango Mead
Bottle. Pours orange-gold with a touch of haze. Nose is ruby red grapefruit and key lime. Sweet with definite orange and grapefruit notes, but the bitterness of pith and peel is preserved slightly, adding balance and closure to the sweetness. Long, elegant finish. Very nice.

Bottle. Pours a medium gold. Dried apple, honey glaze, and nuts on the nose. Apple is forward; it’s much more Golden Delicious or Granny Smith than anything else. The tartness counters the honey notes nicely. Finish is a little short. Good.

Dancing Bee Traditional Sweet Mead
Bottle. Pours a clear light gold. Dry on the nose, with honey and herbal notes predominant; definite rosemary and sage aromas present. Heathery and herbal on the tongue; the honey is balanced and not overwhelming. This is not a very fruity mead; much more about the grass and earthy notes. Finishes clean. Nice.

Deep red pour. The aroma has some strong honey and red wine notes. The flavor is much more red wine like. I get some dry, tannic wine notes. The mead is not too sweet. As it warms I also get some beef jerky notes, which are really odd sounding, but actually go OK with the other notes. Medium mouthfeel. Odd, but not bad.

Clear still rosy copper. Nose of sweet raspberry nectar and some semi-dry honey nuances. Flavor is smooth and delightful, somehow perfectly sweet enough to retain the raspberry’s tartness and dryness. Semi-tart fleshy raspberry flavor that is pretty calm and reserved, blending into a mild sweetness of honey and a light strawberry kinda flavor, while still remaining dry and sorta honey-like. Not too much honey, but just enough to remind you it’s mead.

Clear still light golden with a funky nose like oak, a hint of earthy mustard, and alcoholic esters. Flavor is more tolerable but still falls short. A bit watery and a bit astringent. Warm. Flavor has some orange blossom, spicy oak, a flavor kinda like grapeskin, and boozy tannins.
