Elephants Rock Cider Toffee Apple
At cellar temperature and into a snifter. Hazy once the yeast settles; a medium gold that is much darker than the sample I tried when it was fresh. Appears still. Strong, nutty note to the aroma hinting at heavily roasted almonds, salted peanuts in skins and bitter, dark toffee brittle. Big whiff also of paperbark, red-wood and sandalwood oil. Another whiff reveals hot chocolate powder atop oxidised red-wine. In a blind tasting I would not know what I am about to try. Wow, this has aged so incredibly well to the point of being nothing on a tasting of it fresh in 2014 (no notes!). Bone dry, woody, incredibly chocolaty and nutty with hints of leather, umami reminiscent of sautéed mushrooms, dusty carob, red-wine vinegar and tart acai berries. Very long intertwining finish. Body is featherweight but the presence is huge. Alcohol melded in well to remain hidden. Carbonation at this point close to still. Mild hint of rose-hip tea to make it even more complex. Good level of astringency and acidity. Drinks with ease but each sip excites the palate. Find nuances of funk with familiar flavours of home coming through. Elephants Rock Cider Oaked Pear
At just on cool and into a flute. Hazy, pastel yellow body and still. Light acetic vinegar and mild hessian notes to the sour, stewed pear, lemon drop and oak aroma - unusually pleasant. Sour, tart and tight with a hint of funk from onset of wild yeasts. Still, smooth and soft in the otherwise rough finish. Dry but with a puckering, citric fruit note of lime and lemon making it exceptionally tangy and tart. The body is light like a Chenin Blanc and it holds a little of the wines character in the finish. This is delicious but I hardly think it was meant to end up so tart and refreshing. If it was made from pear and apples it sure doesn’t show. All funky acids abound. Lovely! Elephants Rock Cider Apple & Pear
Appears as a serve of lemon squash in the glass. Pastel yellow body that is highly effervescent and cloudy. Nose is earthy and deeply woody with inklings of salted cracker, soft set cheese, pear pulp and apple peel. Dry, woody and reminiscent of sucking on apple peel, but in a good way. For how effervescent it appeared it is quite soft and supple on the palate. Body is good, well rounded with a light fruit sweetness to the tip. Lingering fruit and cheese. Quite crisp. Very clean with enough character to keep it interesting. A nice cider. (33cL, bottled on 03/07/14, Elephant’s Rock cellar door)

Elephants Rock Cider Oaked Scrumpy
Bottle from the cidery, Denmark.
Into a tulip at just on cool. Bright, pale yellow body with very little evident life. Very earthy, farmyardesque is the nose. Ample fruit, peel core and all, amongst heavily woody oak and musty notes come through. Very light almost delicate and wine-like on the palate. A soft residual spritz upfront fades so as to be soft and smooth in the finish. Alcohol is well restrained. The oak aging dominates the taste. Very woody, earthy and slightly musty with just a little apple coming through. Dry with a light hit of salted white cheese. This is a very refined Scrumpy. Drinks with alarming ease. I like it, a lot, for just being with-held and clean cut. Nice stuff!! (33cL, bottled 18/12/14)

Elephants Rock Cider Chilli Apple Cider
A year in the cellar forgotten about so into a dimple it goes. High, champagne-like effervescence has it raise a fluff of bubbles up the glass only t settle a few minutes later. Body just off bright; a pastel yellow in colour. Very earthy, topsoil and hessian sack aroma with musty apple skin notes under a nose tickling jalapeno chilli flesh spice - interesting. First sip gave me a shudder, and then the pleasant kick of spice offsets the earthy, tart apple. A lot of peel comes through upfront; has that old, overripe, over-refrigerated apple flavour but shows no aged traits. Body is very light and the carbonation softens to give it a rounded feel. Jalapeno flavour is subdued so it is just the kick of heat that fuels it. Good length of earthy, musty apples gives depth - over all it is quite dry. It gets a lot better as it warms, or as the glass empties. A unique take on your average cider! (33cL, bottled on 23/03/12, Cellarbrations Carlisle)

Bottle from Mane Liquor. Pours murky yellow with a small white head. Nose is only slight apple being over run by sweet chilli sauce. Not overly appley, very chilli forward. Its like blending up a bunch of jalepenos and drinking them. Not for me at all
