Cedarwood, fermenting must, maybe a hint of elderflower, some volatile acids. Slightly sparkling, sweet, but not too sweet, nice acidity. Also some volatile acids. By the taste I would guess this is not carbonated, but was bottled just before the fermentation ended. The cloudiness underlines that. This is an extremely good Sparkling Sake! The nice champagne like aroma was of sweet rice. The vinous mouth feel was tingly at the start with a mediumly tingly finish with a medium milky sweet aftertaste. 4.4 Harushika (Spring Deer) Tokimeki Happo Junmai Sake Bottle at Oishii on 11/17/07 (not sure the size, probably around 300mL). Lightly cloudy as it gets to the bottom of the bottle, with obvious sediment on the bottom (though it does not cover the bottom). I did not mix it in and only let some get in at the end. A softly yellow-tinted white but without too much effervescence. It’s not like it has a head or anything (though a quick ring of bubbles perks up while pouring). Carbonation, furthermore, comes out of solution very quickly and it is closer to still than carbonated by the end of the bottle. Anyways, I don’t think it’s incredibly sweet and sprite tasting, rather, it’s certainly a sweet sake so in a relative sense, this is incredibly sweet. But it’s not like lindemans framboise sweet, or something of that degree. Not nearly as sweet as the kioshu dessert sakes. What it is, is deliciously full of tangerine, melon, lemon and herbal qualities. Both in nose and in flavor, with a distinct, though not strong zip on the finish, from the carbonation (which despite being very low, is quite tight). The carbonation really does help with the sweetness and it remains a very, very drinkable sake, with no sign of alcohol or flaw. One of my all time favorites - it’s incredibly sweet and tastes like drinking a Sprite. Utterly delicious if you like that sort of thing. 3.2 Harushika (Spring Deer) Extra Dry Junmai Sake Light obscure beige color. I wish I had a snake eye cup. Instead I’m using a white guinomi. Usually I use my Le Face Cachee de la Pomme mini tulip. As does Oakes by the look of his ratings. Good sake tasting glass that is. Anyways. This has a nose of light floral nectar and spring melons but at the same time dusty dehydrated notes of the former. The flavor has a strong bit of ethanol and vodka notes along with some earthy plum and vanilla notes. The balance is there too as the nose matches the flavor fairly close. If memory serves me right, +15 is the highest nihonshu-do a sake can get when it ferments out, so this is about as dry as they get and surprisingly, I don’t mind it. It’s fairly pleasant.
