Poured from 355mL bottle @ Mara & Co. Very dark brown with minimal beige head. Very roasty (beerplace won't like this), some coffee and chocolate, medium body. Simple, competent. Wouldn't mind trying a bourbon barrel aged version of this. Decent.

Keg at Fiebre de Malta, Mexico City. Lightly hazy golden, mid sized head. Generous aroma of papaya, mango and tangerine. Mid sweet with light-medium body and well rounded mouthfeel. Lots of tropical fruit hops. A bready slender malt backbone carries it. Long bitter finish. Combines modern style juicy hop aromas with traditional style delicate malt character and early style craft IPA up-your-a** bitterness.

Subtle florals like quesadillas in Xochimilco. Some hay and a little coriander. Clear golden pour with good head and lacing. Light sweet end. Nice balance here, and worlds better than Diablos, which lacks the subtlety of this one. Bottle at el Trappist in CDMX.

From tap at Tasting Room, Mexico D.F. Slightly hazy, light golden color with a white head. The aroma is medium hoppy with peach, grapefruit and orange along with some lightly sweetish malt. Medium-full body with a light to medium sweetness, a medium bitterness and some booze. The flavor is medium hoppy and lightly to medium malty - grapefruit, peach, biscuit, toasted bread. Ends with a bitter, hoppy finish. Could have more intense flavors.

De cervecería Dos Aves(MEX) está IIPA que en la etiqueta viene como IPA Imperial, contiene un 8% ABV y 100 IBU's(dato no muy confiable obtenido de la aplicación Untappd), a la fecha ya con 5 años de producción y esta es la primera cerveza que llega a mi de esta marca guanajuatense para ser más preciso de San Miguel de Allende, que siendo sincero compre con mucho prejuicio ya que había leído en varias ocasiones que era una bomba de DMS pero también había gozado de una buena reputación en un Cerveza México sino mal recuerdo, aun así, ya saben que en esto de probar cervezas uno no experimenta en paladar ajeno y casi de forma inconsciente vi esta etiqueta a donde normalmente acostumbro hacerme de mis compras semanales y ahora aquí estoy escribiendo sobre ella, abajo mi experiencia. En apariencia es una cerveza con una corona de espuma delgada compuesta de perlas diminutas, muy blanquecina y retención mediana, actividad de carbonatación restringida, posee una tonalidad amarilla casi pajiza con una turbiedad que a mi en lo personal me agrada bastante y me parece un terminado atractivo, en las paredes del cristal se aprecia un cuerpo mediano al agitar la copa cuidadosamente. En nariz podemos distinguir mango, piña, toronja, naranja y toques herbales, también tiene un dulzor consistente a miel, el lúpulo es el elemento que sobresale como lo dicta el estilo, la potencia en aroma es media alta, hasta este momento no hay presunción de contaminación o defecto. En paladar el amargor sobresale de inmediato pero esta muy bien equilibrado con la base de malta que hace presencia con un dulzor ligero y agradable que da como resultado una astringencia restringida, los sabores encontrados son mango, toronja, naranja madura, resinosidad y por otra parte un muy rico toque de miel, final de sensación semiseca con retrogusto herbal y frutal predominando mango y naranja, buena durabilidad del sabor en paladar y tal como auguraba en olfato no tiene ningún tipo de defecto y será bastante grata para los paladares que acostumbran este estilo si es verdad que no me maravillo cumple perfecto con ser una IIPA, si antes tenia defectos y ahora están haciendo este tipo de cervezas enhorabuena por Dos Aves siempre den más de una oportunidad.

APARIENCIA: Color ámbar claro, media carbonatación espuma fina color perla. OLFATO: Floral, toronja, cascara de limón, cereal. GUSTO: Al principio el amargor es intermedio, no se sienten los 100 IBU pero al posgusto ahí aparecen, final seco, ligero calor en la garganta presente los 8 grados de Alcohol. NOTA COMPLEMENTARIA: No es el mejor exponente nacional, Una IPA imperial balanceada “West Coast” en Amargor y gusto licoroso, muy importante consumirla lo más fresca posible, para evitar que se pierda la frescura del lúpulo y ahí pasa a ser una mala cerveza.

APARIENCIA: Cerveza muy oscura, poca espuma color marrón, burbuja fina, poca retención. OLFATO: Olor muy tímido a café tostado y chocolate amargo esperaba más intensidad. GUSTO: Buen cuerpo nada acuosa, las maltas tostadas y el lúpulo presentes pero muy licorosa a tal grado que sobresale de más. NOTA FINAL: El amargor y notas tostadas está bien, no es una cerveza equilibrada, sobresale mucho el alcohol.

It pours golden with slight haze. It has good head retention. The aromas feature spice and some earthly elements. There are also subtle hints of lemon. There are some biscuit and caramel notes. It is moderately spicy. Background elements of earth are also present. Hints of lemon and vanilla are also present. It has a moderate body with a moderately spicy and semi dry finish. There is also some alcohol warming. Overall, this is a good beer overall but the moderate spicy and caramel give it a different interpretation of a tripel.

Beer pours thick and black. Beige head that disappears quickly. Disappointing aroma as compared with the keg version, it’s dominated by yeast esters, little roastiness. Flavor is dark caramel, some light coffee and alcohol, medium body. Not outstanding, not recommended with a cigar, as it is overpowered by an average cuban robust. Sweeter aftertaste.
