Mineno Hakubai (White Blossom on the Hill) Tokubetsu Junmai Sake
Bottle: Pours a crystal clear color with a decent amount of legs. The nose is earthy with some masculine koji, fresh spring onion, potato and kiwi skin. The impact is dry initially but the acidity doesn’t kick in until later, so the mouthfeel feels thick and sweet but it doesn’t taste sweet at all. The low acidity and +3 rating are certainly a sweet spot for me. A more fragrant yeast or rice varietal might perk this one right up. It certainly transports me back to Japan though with the mild koji and rich umami. Yum!

Thanks to ben for sharing at Azia. A subtle fruity/floral aroma with some rice sweetness. The floral notes really come out in the flavor. Exceptionally smooth.

Mineno Hakubai (White Blossom on the Hill) Junmai Ginjo Sake
720ml Bottle: Clear, light chalk tinge with some wavy legs. The nose is sweet and floral with plenty of melon, kiwi, peach and light licorice. The flavor is balanced, for +5 it’s surprisingly sweet, but that’s because of the low acidity. A bit of alcohol is present along with the usual light koji grain notes. Very nice sake for an import, and only $30 for a 720ml bottle.

Mineno Hakubai (White Blossom on the Hill) Junmai Ginjo Sake
Clear with a lime tint. Aroma of tangy pears and supple lemongrass. Smooth, gently caressing and dominated with some pluym and grain. This is very far from rocket fuel sake. Incredibly swillable. Grace and silkyness. A smack of lemon, coriander and some almost oily notes. Delicious. Goes well with $25 toro.

Mineno Hakubai (White Blossom on the Hill) Junmai Ginjo Sake
Moderately oily pour light gold color, a little dark for a ginjo. Watermelon and apple aroma, also hints of lilac and honeysuckle, very flowery. Starts strongly like pears and berries, light almonds with a very little bit of citrus. Alcohol is subtle, extremely smooth. Very pleasant aftertaste of strawberry/citrus. Recommend highly with red meats. This sake took me forever to find any information about on the web, I bought it tonight having never heard of it and am very very glad I did. Every drink is a slightly different sensation, try this if you get the chance!
