Sehedic Cidre Extra Brut
Bottle purchased at Appels en Peren Amsterdam shared at home. Uncorked with a loud pop and myst rolling out the bottle, beautiful. Clear orange golden with short lived head. Rich sweet apples, parmesan, chorizo, moss, tree bark, dry tannins, apple stems. Very juicy and sparkly fizzy on the tongue, but with an excellent sharp dry bitter and light sour finish. Very nice stuff.

Sehedic Cidre Extra Brut
Bottle @ Breizh Cafe. Clear golden hued pour with a white head. Carbonic nose with some phenolics, funky, earth, mild sulfur. Quite complex and floral with brett notes. Flavors are extremely dry, moderate acidic and moderately funky with phenolics that at times can lean in the direction of smoke. Overall nice apple character, and refreshing. Hugely carbonated, bone dry, mildly puckering, mild tannins. Very nice.

Sehedic Le Traditionnel
Bottle at Le Creperie Montparsse. I could sniff this all day. Even a year later the aroma is fresh memory in my nose. We stayed in Paris, but this cider transports you to the Orchard. It’s a very dry cider. No sweetness despite the smell. Still very good and the smell makes up for any faults

Camping Kost-Ar-Moor. 75cl Bottle from Super U Fouesnant, labeled "Cidre François SÉHÉDIC" and a separate tag "TRADITIONNEL". At €3.70 it was the most expensive cider and least commercial looking of the supermarket, which carries about 30 different ciders. Clear orange-golden with bubbles and quick diminishing white head (no retention). Dry appleskin, very concentrated apple, moss, bark. Under medium sweet. Thin body, very dry on the tongue, concentrated apple, very nice fizzy soft carbonation and a very dry finish. Produit issu de l’agriculture biologique.

Sehedic Cidre Extra Brut
Glass at Breizh Cafe, in Paris. Pours a cloudy gold with decent head for a cider. Aroma is bright, fruity, oaky, acidic: lemon, strawberry, musty oak. Taste is full-bodied and minerally, with lemon, orange, roasted apple. Pleasantly effervescent. Lots of oak. Really excellent.

Sehedic Cidre Brut
Bottle at Breizh Cafe in Paris, poured into traditional ceramic vessel. Amber with a small film of white bubbles. Aroma is unreal, so much better than what we get in the States: ripe apple, dark honey, lemon zest, flowers, white wine, slight salinity, aromatic Brett. Taste is similarly delicious: starts like sweet apple juice but with a balancing acidity and minerality. White wine, light spice, long finish, full body. Excellent.

Sehedic Cidre Extra Brut
Bottle, bought @ La Maison de 100 Biere Bretonnes, Locronan. Pours a lovely copper with a small, fizzy white head. Aroma has fabulous fresh red apples, zesty, light acidic, oaky, candied apples. Highish carbonation, lovely dry and light creamy mouthfeel. Flavour is very clean, red apple, very dry, oaky. Not very tart, but maintains a level of sweet toasted caramel. Lovely freshness and even a bit warming.

Sehedic Cidre Doux
Corked bottle at Les Glénan, rue de Montparnasse, Paris, as Cidre Biologique Doux
Muddy golden color, well carbonated but without head retention. The aroma is mildly sour and citric. It’s not very sweet, maybe just a bit more than their Brut, but this one has a pleasant sourness, that covers the apple but balances well the sweetness. Quite original in the French cider panorama.

Sehedic Cidre Brut
Corked bottle at Les Glénan, rue de Montparnasse, Paris, as Cidre Biologique Brut, 5% ABV
Hazy light amber color, peristent perlage, no head retention. Average apples aroma, with just a touch of nuts. The mouthfeel is not extremely dry, a demi-sec almost, with light apple flavor but an intriguing woody astringency. The final is actually drier. It’s more interesting for it’s mechanical qualities than for its flavor.
