Corked bottle, as Réserve d’Éole, vintage 2007, 10 years old
Amber color. Nice complex aroma, not very deep, mild acidity. Bold body, very sweet without being syrupy, strong flavor of caramelized sugars, dominant acidity, and some astringency in the final to increase complexity.
Excellent.

Amber-brown. No head. Quite appley on the nose. On the palate, sweet with moderate sugars, and light tannins. There’s a decent acidity and juiciness, apple skins.

2007 vintage. 375mL bottle, pours a dark caramel brown. Aroma is on the earthier and spicier side for an ice cider, with earthy red apples, treacle toffee, caramel and brown sugar. Flavour is similar, with a spicier and earthier red apple character, moderate treacle and brown sugar. Not the deepest or most complex ice cider, but I like the earthier character upfront, which then transitions to treacle. Very good.

pours clear very pale yellow with few bubbles, little to no legs. lots of fragrant pears, but also apples of course, woodsy vanilla, bitter citrus, some peel, bit of honey sweetness, chalk. flat carbonation, light body - very oily; gently warming sweet and spicy finish. not enough prix to pull it through but a nicely balanced sweet cider it is.

Sample from bottle (375 ml) at home. 2013 harvest. Clear bright hay color with no head leaving some legs on the glass. Aroma is of tropical fruits with light apple notes, floral notes and a mild but fun minty touch. Taste is slightly sweet with mild to moderate acidity, tropical fruits, floral notes, mild apple presence and a touch of alcohol. Medium body. A bit oily mouthfeel. Tropical finish with light alcohol warmth. A fun tropical forward Cidre Liquoreux. Fresh.

How: Bottle (750 ml) shared at Mont-Carmel tasting. Bought at the cidery.

>>> A mild cider with an interesting fresh raspberries presence. Really easy drinking and quenching.

- Clear pale salmon color with a thin ring of white foam.
- There’s a mild but enticing fresh raspberries presence in both aroma and taste, but it’s a bit more interesting in taste with the moderate acidity carrying it a bit more.
- Not complex at all, but super refreshing and easy drinking/quenching.
- Apple presence is so delicate that it’s barely noticeable.
- Light body, good carbonation and rather dry finish.

Flavors: Mild raspberries, herbal notes, very mild apples.

Pours a medium pink with no or at least very small legs. Nose is of light apples with a slight soft drink feel to it. Taste is of apples that’s for sure and red berries. Body is light to medium and carbonation medium-high. A little sticky and sweet. Overall a fun drink, not much bad to be said about it.

Bottle, courtesy of Ferris (thanks man), pours a clear blonde with a few bubbles for a head. Aroma is quite sweet, with candied sugar, caramel and toffee -- smells like a cross between a regular sweet cider and ice cider. Flavour confirms this hybrid, with caramel, candied sugar, apple skins, and a very pleasant alcohol burn. Really cohesive and quite complex. This is really well put together. Excellent.

Sample, 2007, as réserve d’éol. Crystal clear copper pour. Aroma is funky, old caramelized apple, oxidized notes, cardboard, some light grassy notes, dusty, boozy. Taste is moderately sweet, pretty strong acidity, lots of apple skin, light oaky tannins, sherry notes. Palate is full bodied, lots of alcohol warmth. Decent. It does seem like it has some age, but I’m not sure how this influences it really as I’ve had ice ciders that were way older and held up much better and regularly rate ice ciders in the same range. I’ll have to give it a shot fresh just to make sure.

Blond color. Sweetish apple aroma. The flavor is better, not reaching the depth of Ice Ciders, but it’s nice, fresh, sweet; the acidity is on the low side.

Val Caudalies Cidre de Glace Réserve
2007 vintage. Pours a clear dark golden with no real legs. Nose is of apple, brown sugar, alcohol with a light "green" character. Taste is moderately sweet and tart, of concentrated apples with a little brown sugar. Flavor isn’t as long lasting as your usual ice cider and it ends a bit abruptly which is slightly unsettling. Still, not a disaster. Alcohol is nowhere to be found in the taste. Body is medium-medium-full and vaguely liquorous and sticky. Overall a fair ice cider, a bit subpar when compared to others though.

sample. 2007 harvest as ’’réserve d’école". clear amber, burnt orange tint, with some legs when swirling. spicy brown sugar, caramelized spicy red apples, buttery berries and raisins, brandy, burnt/flambéed calvados, very disturbing garbagy rotten fruits aroma - oxidation perhaps; hint of tartness, red caramel glazed apples. flat carbonation, medium-full body - syrupy; sweet, woodsy and spicy finish. interesting red caramel toffee apple feature but obviously and unfortunately oxidized.

Val Caudalies Cidre de Glace Réserve
2 oz sample from bottle (375 ml). As "Réserve d’Éole". 2007 Harvest.

Appearance: Clear bright golden-orange with little alcohol legs.

Aroma: Brown sugar, caramelized apples, honeyed notes, tannins and mild solvent-like presence.

Taste: It’s quite sweet - like most ice ciders are - but this one isn’t balanced by much acidity and feel sweeter that ice ciders normally do. Brown sugar and caramel and the dominant features along caramelized apples, mild acidity,

Palate: Medium body (not heavy despite the sweetness). Oily mouthfeel. Brown sugar and caramelized apples finish. A bit of alcohol warmth.

Overall: Decent complexity, but not my kind of ice cider as I think it lacks of cohesion a bit. Too sweet, not acidic enough and a bit "off"... but it’s not bad at all.

Bottle @ Mondial des Cidres de Glace 2015. Clear golden colored cider. Some peach, tart citrus, and lots of tropical fruit aromas. A bit of tart green apple as well. Slight fruit infused tea on the tongue. Sweet apple, caramel, and tropical fruits. Less acidic than I’d hope, particularly given the nose. Nice overall.

Bottle sampled at Marche des Sauveurs with Andrew, Ricky, PJ, Brendan and Streets. The cidery rep explained this to be similar to their flagship ice cider, except with 50% of the sugar. While still pretty sweet, the reduction in sugar is evident in the semi-dry character which balances the sweet, tart apple flavors. Some white wine character as well. Nice.

2013-07-27. Dark amber body, syrupy body, headless. Flavour is quite sweet and lightly syrupy, tart acidity and then a healthy dose of tannic apple skins. Acidity comes out a bit more as it warms up. 7+ Lightly musty aroma, tannic skins, apple must, whispers of straw. 7+ Smooth medium to full bodied palate. 3++ Nice, but just a touch too tannic for my preference.

2008 vintage. Weak aroma, doesn’t knock you out like a quality ice cider should; swirling reveals mild macintosh, grass, tangerine. Very balanced, integrated flavor, but doesn’t have the concentration or intensity needed for the top examples of the style. Nice acid, nice sweetness. Solid cider.

Pale golden pour with a nice light spiciness. Soft and chewy with a bit of nice fresh apple character. A nice apple skin tartness as well as a little bit of soft caramel character. Muted sweetness and a very light tartness as well. Peppery with a light bit of cooked character. An almost buttered rum character as well. Fruity cider.

Pouring at Le Mondial des Cidres Glaces. Pours a clear straw yellow. Soft acid and light apples. Sweet and tart, with lots tart acid. A touch of sulfites and some long lingering acid on the finish and a touch of soft sweetness. Amidst all of the ice ciders this came across a bit weak and light, but I tried it again by itself the next day and it was quite pleasant.
