Northern Spy is a single variety cider made with a 200-year-old New York State apple. The spy trees in our orchard are old and gnarled, producing lopsided, thin-skinned fruit, which is pale green and striped with pink. Spies have less tannin than their European cider counter parts but also more acid so this cider has a lighter, tarter style than our others. We use the champagne method to infuse this cider with tiny, elegant bubbles.
Northern Spy is crisp, bubbly and bone dry with a steely mineral character. Its clean acidic finish makes this cider an ideal and refreshing companion to most food. For example pair it with mushroom and thyme crepes with a sherry cream sauce, warm Brie with sliced apples or roasted root vegetables with garlic and rosemary. Fish, seafood, pork and chicken are enhanced by this cider, as are farmstead cheeses, particularly chèvre.
