COMMERCIAL DESCRIPTION
A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006. Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo’s system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it’s time to bottle (it all depends upon the oxidation velocity). Etichetta Oro Golden label This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.
It can be accurately compared to a drawing-room sherry.

UPDATED: MAR 6, 2019 Bottle shared. 2006 vintage. Nose of sweet condensed prunes, raisins, light chocolate, and alcohol fumes. Dark reddish-brown color. Super-sweet dark fruit , sweet raisins, honey, toffee, candi sugar, some light wood notes. Medium body. Very rich and still quite sweet. Hides the alcohol very well.

No head, just some bubbles. Aroma is slightly dry and nice oxidized, oak, burnt sugar, raisins, caramel, chocolate, hay, nuts, candied sugar, alcohol, butterscotch. Taste is slightly sweet and nice oxidized, candied sugar, raisins, hay, burnt caramel, nuts, almonds, butterscotch, grass, chocolate, oak. Medium bitterness, slightly dry mouthfeel. Nice!

Silver 2006. Pop from the cork, yet pours totally still. Zero head/lace; looks like a mead though.

Astringent aroma, a tad barrely, notes of Utopias heat. Super silky sweetness on the palate, liquid English barleywine caramelyness. Zero burn. Totally flat, and damn tasty.

Bottle at Delirium. Totally flat. Aroma is booze, fruity, raisins. Taste is crazy, loads of fruit, sweet, marzipan, very easy to drink. Feels very voluminous in the mouth. Strange but in a difficult way to explain.

2006 bottle. Flavr dark brown with orange tints. Nose of chocolate, caramel, sherry. Big flavors of caramel, molasses, treacle, stewed fruit. Ethereal body, light and silky. Wonderful mouth feel. Light tartness. Great.
