COMMERCIAL DESCRIPTION
Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

UPDATED: MAY 3, 2023 Beer #6 of my 10,00th Beer Milestone Celebration! 2013 Vintage (in FDR3/Foeder? 3) Pretty muddied amber coloured body with a thinnish, single to two centimetre tall tan head that fades pretty quickly and leaves a very thin lace on the sides above the very nicely ruby tinted amber and copper tinted body. Aroma of soured, funky, bretty cherry notes with a lot of oak and cedar and woodsie elements right behind with some yeast and bread here as well, with a distinct rustic and almost mushroomy note towards the end with some light sweetness, but the cherries and wood really show through in the nose, at least. Medium-bodied; Pretty effervescent and bitter malt notes show at first with a dry and floral bite with some woodsie, rustic and nutty finishes from the malt with a little of the cherries here, showing tartness more than sweetness, all ending with a very drying, oaky, cedary note that brings out some big bitterness and a light funky tart quality at the end. Aftertaste shows some more of the tarter cherry and funky oak notes with some brett, light caramelised sugars, raisins, grain and rustic qualities and less of the sweet, cherry and complex yeast notes, perhaps this was aged TOO long? Overall, a pretty nice beer that shows a lot of good complexity, a great range of flavours and a ton of different notes, but less of the sugars, cherry and lightness than I was expecting, but more of the oak, dry and floral notes that make this dry and crisp throughout. I sampled this 50 cL, wax-sealed bottle, as Beer #6 [of 21 - 10 (for 10,000) of Each side of the 10,000 Beer Milestone and the 10,000th itself!] of my 10,000th Beer Milestone, purchased from BeerTopia in Omaha, Nebraska on 09-November-2018 for US$14,99, bottled in 2013 as FDR (Foeder?) 3 and sampled at my house here in Washington on 02-May-2023.

Sampled at a festival. Flanders oud bruin. Brown color. Surprisingly sour, definitely in the Flanders style Balsamic, yeast, fermenting cherry, and acid. highly acidic to the point it might be hard to drink a full bottle but great flavor.

Appearance 3 /5: Amber brown with white frothy head Palate 4 /5: slightly tart with sour apple and cranberry Taste 7 /10: a pleasant oud bruin. Light, tart, crisp. Overall 17 /20: unable today more. Rated too many beers with Beastiefan2k. Pleasant and delicious despite the numerous beers I've had. Final: 3.9

UPDATED: JAN 1, 2018 500mL capped bottle. Clear ruby brown. Small head but sticks around. Great lack of acetic and very traditional earthy musky red grape and cherry. Smooth mouthfeel and light sweetness to work with earthy and potty cherriness.

Strykzone (8457) - Wood River, Illinois, USA - DEC 27, 2017
Bottle. Amber brown and clear. A beige head is noisy and soon becomes a thin layer. Aroma is funky, robust, and complex. Dark fruit including cherries. Flavor is milder than the aroma. It is also funky with earth, and wood. Woodsy somehow. Spices are all over the place. The finish is quite malty and almost sweet. Nice.

2017-11-12. Hazy brown body, modest tan head fades. Aroma of tangy vinous fruit. Flavour is rich, tangy fruit. Sweetish malt in the middle. Dry tangy fruit in the finish lingers, moderate sour notes. Average plus to medium bodied palate, light carbonation. 3+ Interesting, I like it but a small pour goes a long way. 7/3-4/7/3/15 Bottle shared by wilco.

At On tap. Clear dark copper color. Dark fruit aroma. Sour notes. Dark cherries, dark malts. Low sourness on the flavor with dark fruit and cherries/plums. Restrained warmth.
