COMMERCIAL DESCRIPTION
“Like l’Amoureuse, La Fiancée is a combination of dry saison and the freshly-squeezed juice of local grapes, blended and fermented together. The result is a relatively dry beer with a light, fruity, vinous nose. In this case, white Pinot Gris grapes are used. Unfiltered, unpasteurized and re-fermented in the bottle, La Fiancée will continue to evolve and grow more acidic over time, thanks to the wild yeasts that occur naturally on the grape skins.”

Pale golden color with close to no foam. The smell reminds of a dusty white wine barrel. The taste is light sour, a little grape and first of all massively over carbonated. Dry in the aftertaste. Not the most convincing beer of trois dames.

Hazy blond color with frothy head. The aroma is very interesting; some Lambic smells like this, but it has a stronger footy component than most Lambic, a bit fruity too. Highly carbonated, smooth, rather dry; some citrus fruit peel flavor, also woody and astringent.
Nice.

Bottle from brewery - Clear pale golden color with a champagne foam, fast disappearing, no lacing - Aroma is fresh, vinous, raisin, fruity, hints of lemon and cider - Flavor is vinous, fruity, light sourness, apple - Light body, light bitterness, fizzy carbonation, light sourness, dry, dry cider finish - not really my kind of beer but very interesting and well designed beer

Cloudy and dark yellow in color. Smells of lemon, white wine, and some barrel. Taste is similar. Pretty decently balanced, nothing completely overwhelms as it easily could have with this combination.

Bottle from Erzbierschof, when it was quite new a few months ago. Hazy yellow color with small head. A nice vinous fruity aroma with some yeasty character. Taste is rather dry, fruity, sourish. The finish is metallic, like I often experience it with Trois Dames. This time it really doesn’t fit and destroys an otherwise super beer. Until the very metallic finish, it was great.

330ml bottle served in tulip glass. A: Pours a very cloudy pale yellow color forming a medium sized and light foam head with good retention and lots of thin lingering lacings left in the glass. S: Great nose. Very fruity, spicy and bready. Strong notes of white grapes and honey. Light notes of pepper. Tart and sweet. Strong notes of lime. Flowery and citrus hops in the end. A bit metallic and boozy. T: Slightly sweet upfront. Notes of pale malts and fruits. Juice of white grapes, honey, lime, white bread, grapefruit, hops and leather. In overall, the taste is dry and sour... And bitter. A bit metallic with hints of earth. M: Medium body. Low carbonation. Very fruity, sour and grassy aftertaste. O: Great beer. Excellent drinkability.

from Erzbierschof - pours a hazy pale blond beer with a persistent little foam; funky fruity aroma of grapes, cider and apples, sourish; full-bodied, solid carbonation, some sweetness balanced by a fair sourness, quite dry and long vinous and fruity finish with lingering notes of berries and cider - nice one again from Trois Dames
