COMMERCIAL DESCRIPTION
Blended Barrel Aged Imperial Stout For Phil is a one-off blend created to honor our friend Phil Wymore of Perennial Artisan Ales and their 10 year anniversary. Inspired by Derivation Blend #6, we blended barrels of Derivation, BBT and OWK with several barrels of their Maman, before finishing them on Ghanan Cocoa Nibs, Mexican and Tanzanian Vanilla Beans, and Fresh Ground Cinnamon. The threads rested in some of our favorite bourbon and rye barrels for 23 to 40 months before blending. Happy Anniversary, Phil. Introducing For Phil, a beer blended for my buddy Phil Wymore and his 10 years of success at Perennial Artisan Ales! I think everyone reading this knows, but I got my brewing start at Perennial more than 10 years ago. Phil hired me as his first brewer - just an avid home brewer who had experience in distribution and could also bartend. I think I was a bartender 1 night at Perennial and was immediately welcomed into the brewery. I helped Phil brew the first batch of Perennial beer in St. Louis, a batch of Hommel Bier we brewed with Dave Johnson at Kirkwood Station, and continued to grow with them up until Side Project took off and moved Side Project production to our current location here in Maplewood. Just like I did for Gabe at Anchorage, I wanted to blend up something special for Phil's 10th. I know that their anniversary year was at the end of 2021, but we ran into some major delays (completely ran out of bottles!) and we are now ready to share this beer with you and our friends at Perennial. In August we hung out at Perennial for the day and they let us taste through their barrel stock for picks we could bring back to Side Project for the final blend and treatment of For Phil! We selected barrels of Maman which we blended with barrels of 3 different Side Project recipes before treating this beer exactly like the final Derivation I blended at the Perennial facility before moving everything to our current building - Derivation Blend 6. Final Blend: 57% Side Project Barrel Aged Stout / 43% Perennial Barrel Aged Stout Side Project Threads: Ellipses Recipe - 38 months in BLiS Maple Heaven Hill Bourbon Barrels Vibes Recipe - 24 months in Knob Creek S'more Vibes - 34 months in Willett Family Estate 5 year Bourbon Perennial Threads: Maman Recipe - 25 months in Old Fitzgerald Barrels Maman Recipe - 25 months in Rittenhouse Rye Barrels Maman Recipe - 21 months in Elijah Craig 12 year Barrels The final blend was then treated with a heavy hand of Ghana Cocoa Nibs and a 50/50 blend of Mexican and Tanzanian Vanilla Beans. We then added a thoughtful amount of fresh ground cinnamon to pull it all together and to mimic one of my favorite Derivations to date - Derivation Blend #6. UPDATED: APR 21, 2024 [Spontan Cykelkælder Smagning] Aroma: Huge cinnamon, cocoa nips, brownie, huge burned figs, bourbon and ice cream Appearance: Pitch black with no head Taste: Heavily sweet and bitter, cinnamon, roasted malts, soya and cocoa nips Mouthfeel: Really thick creamy smooth mouthfeel with soft carbonation Overall: Pretty solid, but Barrel-Aged Abraxas is better 🔥

UPDATED: MAR 6, 2024 Bottle at share. Black with almost no head. Cocoa, cinnamon, light oaky bourbon. Quite intense yet insanely balanced. Lovely stuff.

UPDATED: OCT 1, 2023 Draught at the brewery, 10/1/23. Possibly clear, dark, no head. Lots of cinna-cacao. But also lots of lovely bourbon and chocolate malt. No alcohol or excess sugar. Almost a black pepper and red wine character somehow. Soft, pillowy...oh man, the cacao-cinna-vanilla interplay is stupid. So light and bright from vanilla, with zesty cinnamon spice and fruity, earthy cacao. Elegant barrel, well-attenuated, chocolatey malts. Clean, no alcohol, no excess sugar. Pretty nuts. Usually dislike cinnamon, but they made it work here.

UPDATED: DEC 28, 2022 Bottle shared by a friend on 12/22/22. Black pour with a thin light brown head. Aroma of malt, chocolate, cinnamon and bourbon. Malty and chocolatey flavor with cinnamon and vanilla accents before a bourbon and cinnamon finish.

UPDATED: JUN 23, 2022 750 ml bottle from the brewery. Pours a deep, dark, opaque brown with minimal head amounting to a thin tan ring. Notes of cinnamon, roasted malts, dark and milk chocolate, some dark dried fruits, vanilla, molasses, and bourbon and rye whiskey warmth. Full-bodied, with low carbonation and a spicy, roasty, warming, sweet mouthfeel in good balance, albeit with each element equally intense. Great stuff.

UPDATED: FEB 20, 2022 750 ml bottle to snifter, shared with the Mrs. Pours a nearly opaque motor oil with thin mahogany head that steadily dissipates into lacing. Smells and tastes RICH and cinnamon-forward followed by notes of chocolate, vanilla, and oak. Mouthfeel is full-bodied and viscous, mildly warming, and moderately bitter. A cinnamon-bomb that is good now but will likely be better in a year or two.
