I’m sure its simple enough to make and many of you have had it but ive only just tried it for the first time recently. It is on the menu at Tired Hands and its one of the most heavenly things ive eaten. Anyone have a good recipe for this?

Just get some bacon, add some sugar and honey and make sure to cook it thouroughly.. making it sticky and crispy...

Great stuff.. use it all the time!!

It’s easy. Use the google to learn to make a candy glaze.

We’ve done several five course meals with bacon as the focal point and my Executive Chef has candied just about every part of a pig, anyway. Email him scott at flixbrewhouse dot com. Let him know that you got his info on RB.

He is going on vacation in like 2 days, so email him now.

In fact, 2 weeks ago he used some of my ’95 Triple Bock to make a cayenne candy glaze to prosciutto. It was good...but not bacon good.

The maple black walnut butter for the candied bacon at Tired Hands was quite awesome as well. I might take a whirl as making this as well.

I know where I am from we do what’s called pig candy, I assume its the same concept. Basically I heavily coat thick strips of bacon in dark brown sugar, place on a wire rack over a cookie sheet and smoke at 350 for about 25 minutes, I use apple or cherry wood for smoke. The sugar will crystallize on the bacon and make it extra crispy. But it is very good, maybe not good for you, but taste is on the money

After about 20 minutes, take a look at it and I may sometime flip the bacon, but the wire rack will keep it off of the grease. That way it won’t be soggy

Like I said, not sure if this is the same as you were talking, but it sounds like it could be

It was tasty. The second time they served the bacon with just a side of maple syrup...not sure if they changed it up or just ran out of the butter though.
