Poured a cloudy yellow color with aromas of light spice and yeast, old hops, with some light fruit. Flavors matched the aromas, light fruit, with some off hop presence, it was an old bottle, but still a little off.

Bottle... Pours hazy and golden with a small, creamy, white head. The bouquet features yeast-driven funkiness and hints of fuzzy fruits and bourbon. Medium-bodied with tingly carbonation. Bottle... Pours cloudy and golden with a small, brief, white head. There’s not much going on with the aroma - yeasty and some light notes of fuzzy fruit. Medium-bodied and watery with soft carbonation. The flavor is modestly bitter, lightly tangy and mildly yeasty - mundane overall. Tongue-numbing finish. Good table beer. Redbud Cuvee Two
Dark burnt orange, slightly hazy, with a thin head of large white bubbles that pop away after a minute or two. Aroma: stale bread, caramel, old oranges, hints of banana and pear. Better, more complex flavor. Pear, a hint of banana, white wine, green oak, a little vanilla -- all of that is up front. The swallow is very saccharine, close to cloying, with alcohol and flashes of white pepper. The sugary medium body is fairly thick for the style. With very soft tingles of carbonation, the bubbles are hardly even there. Not much alcohol. A bit too sweet overall, and I would’ve liked more showing from the barrels.

"last of the trade from Hannah. Nice aromatic hops and light fruit in the nose. smooth and easy drinking. Not a TON of complexity, but it’s yummy (citrus hops and light fruity belgian yeast). Something I would drink a lot of if easily available. Thanks Hannah."

"definitely a one trick pony...not a whole lot of beer-ness mixed in with the whiskey. that said, it was pretty cool. guess it depends if you like the booze or not. fruity and sweet, and definitely boozy as it warmed. not a whole lot else going on, but the barrel used was an interesting one. kept puttin my nose back in the glass. i’d get again if it wasn’t to steep, but i preferred the lower abv dry-hopped cuvee 3. thanks again Hannah for the trade."

Shared at the Batch 600 Swamp Head release. Pours hazy yellow with a fluffy white head. Aroma of some belgian yeast and spices, maybe a hint off dead hops. Flavor follows similarly with belgian yeasty notes, some interesting spice, champagne notes and spritzy things going on here, and a hint of deadened hops. Light bodied, crisp, with high carbonation. This one was a little weird. Not sure how old it was (had this on August 2nd, 2014) but the weird spice note wasn’t my thing.

[Bottle] Murky orange colored pour with a large white head. Nice lacing as well. Nose is of light fruits, brett and lemongrass. Taste is of peach, pear, white pepper, lemon and tangy yeast. The finish is dry and surprisingly sour. Highly carbonated. Nicely balanced. Good stuff! Tasting notes from 12/2011.

750 ml bottle, thanks to Greg. Slow gusher of a bottle. Pours hazy gold with frothy white head. Though others picked up on the whiskey, I got absolutely nothing whisked about this. Tropical, funky, bright fruity nose. Lightly tart, dry finish. Really quite nice, and quite a bit different from (and preferable to) the cuvee #3.

Pours hazy golden with a good white head leaving some small laces. Aroma is fruity funky bretty nicely sweet too with some tones of hay. Flavor is fruity sourish funky sweet astringent and a bit yeasty.

Bottle thanks to Broadway Liquors. Pours a hazy pale gold with a bubbly white head that dissipates to the edges. Aroma has a nice light funk with light fruit a bit of sweet light grains and just a hint of oakiness from the barrel. Flavor has some light tart fruits with a good amount of sweetness some dryness and a sweet grain backbone.

The beer poured okay with a nice hazy golden brown color, there is just a mild white ring for head and no lacing on the glass. The beer smells decent with a definite sweet smell, followed by a definite bourbon scent, definitely get the aging in it. The taste is decent with a nice blend of sweet fruit, almost raisin with a good smooth bourbon flavor to follow, very warming. The mouthfeel is okay with a medium warming sweet taste lingering around but not much else. Overall, this beer is okay to share with others to try something different but doesn’t blow me away. Sip this one, don’t slam.

Bottle. Pours black with a brown head that dissipates slowly to the edges. Aroma has a good amount of dry red wine notes with a bit of tart stone fruits and roasted malts. Flavor starts with light roasted malts but has a good amount of sour red fruits and dry red wine.

Sampled at Clockwork’s 4K/5K/10K gathering 2013. Bottle pours a hazy, milky orange peach-juice body with nice white lacing. Aroma is light funky fruit and faint flowers. Mouthfeel is smooth and light with notes of flowers, wheat, lemon and funk. Light herbal character. Very nice.

750 ML served into a Duvel Tulip. A - A glowing hazed orange with a hefty bone white head. S - Loads of tropical fruits-pineapple, mango, papaya, apricots, peaches, lemon meringue, sawdust, dry chalky yeast against a bright funkiness. Old church pews mixed with a beautiful aroma of peaches, if I could sum it up. T - Creamy tropical fruit-mango, papaya, and guava, some grainy stone fruit- peaches apricots all play against a clean salty wooden backbone. The salty oak adds dryness and separates the fruit from the malt. Grapes and white wine like flavors start coming out while a sweet malt holds true.The drink leaves fruity and woody with dry finish. M - Medium carbonation, medium body, creamy feel, very dry. As much as I liked Cuvee 3, this is the best beer this brewery has put out, and it will be hard to ever live up to this one. The yeast is very complex with creamy but acidic character, and a sweet malt comes through and fills the holes. It has a complex rawness that I have yet to come accross from any other Saision. From drinking this beer 5 months ago, I can say that the yeast has already started transforming quickly. The fruit is more tart and acidic. The wood notes are drier than ever. This beer is definitely rising in overall quality. Still woody and raw, and still one of the best Saisons I’ve ever had. Serving type: bottle 06-01-2012

Bottle at James’s 4k/5k/10k tasting. Pours a hazed gold with a thin white head. Musk on the nose, soft funk. Musky, a little sourness, lots of musky yeast. Chewy yeast and musk. A little bit of wood, funk and yeast. Super easy drinking, very nice and incredibly subtle. Liked this a lot.

Redbud Arbor Imperial Stout
A - Very dark brown, almost black with 2 fingers of cocoa foam. S - Roasted malt, peat moss, vinous dry red wine aromas, woody and a bit smokey. Mushrooms, sharp alcohol vapors, T - Cola sweetness off the top then sour and earthy. Woody hops provide a bitterness mixed with a metal sourness. It has a smoked but tart soy sauce character. Prunes and tart grapes dry out what little sweet was to begin with. Finishes dry with dark chocolate and currants. M - Thin side of medium, carbonation drops off after it sets. This reminds me of a Baltic porter mixed with red wine. The mouthfeel was thin and lackluster. The sour/tart character did not add, but seemed to take away from the collective flavors. Too many off flavors that didn’t blend well. Maybe some age would do this good. Serving type: bottle 11-02-2011

A - Hazy golden orange with a huge foamy head with excellent retention. Good lacing from top to bottom. S - Pine, herbal, floral, apple skins, pepper, spicy yeast, unripe banana, hints of musty yeast come out when warm T - Woody pine, orange cream citrus then turns sweet with tropical fruits, mango, apricot, granny smith apples move in with some earthy spice, and pepper. Acidic toward the dry finish. M - Medium body, moderate active carbonation. Good complexity, nicely layered with a dry finish. A fine Saison that hits all the marks. Serving type: bottle 10-04-2011

A - Pours a hazy orange/amber with a billowy 2 finger head that retains well for the ABV. S - Lots of fruit and spice - bananas, candied pears, apricots, tart plums, apples, clove, breaths of alcohol. T - Starts out sweet with a mix of sugary and tart fruit, pear, tangy mango, apricots, bananas, tart strawberries. A good amount of clove and peppery spice then turns very dry with notes of grape skins, and some subtle hops on the finish. M - Medium body with tight carbonation, slightly syrupy, very dry. I’ve been waiting to break this out since it hit the shelves in Febuary and I couldn’t wait any longer. The nose is very complex. Great Belgian flavors that are hard to pick out but meld together very well. A very good example of the style. This beer brings more character than I expected and I’ll definitely be picking up a few more bottles for the cellar. Serving type: bottle 07-02-2011

Pours a hazy orange color. Thin, fizzy white head that dissipates quickly. Aroma is bourbon, oak, peach and vanilla. Flavor is similar with a little bit of candi sugar sweetness and heavy emphasis on the whiskey barrel flavor. Medium bodied and slightly fizzy mouthfeel. Nicely balanced beer but not something I would probably go back to load up on.

I think this is a somewhat underrated beer. Quite pleasant and surprising. For a Saison it had a floral hop aroma. The color was cloudy like a pear cider. The head was enormous. Clean and weighty palate with a moderate carbonation. The flavors were big and mixed. Hops up front but Belgian champagne yeast. Some fruitiness but earthy essences as well. Really unique.

On tap at rePUBlic. Pours a clear yellow gold with a thick white head that lasts throughout the beer and laces nicely. Aroma has a nice combination of flora and grass with an earthy wheat backing. Flavor is similar with grass throughout backed by light fruit, flora and earthy wheat. Very drinkable.

The aroma was my favorite part. Floral, fruity, Belgian yeast and indications of a sour. Nice brownish golden color with white head. Somewhat cloudy. The taste somewhat resembled the aroma but there were hints of whiskey and a sharpness that reminded me of Brett. Some hops bitterness. Dry finish and clean palate. Easy to drink. Good first impression of this brewery.

25.4 oz bottle. Dark brown with a bubbling tan head. Nose is chocolate and coffee; opens up to notes of molasses and tart berries. Medium body with a buzz and a tang. Taste is chocolate, sour cherry, red wine and black pepper. Likely infected but drinkable in a sour porter way.
