thedm	2.7 Rikyubai Mukune (Root of Innocence) Junmai Ginjo Sake This bottled Sake from a bottle shop poured a head of no head bubbles and a transparent clear colored body. The weak aroma was of plastic. The mouth feel was weakly tingly at the start and at the finish with a strong vinous aftertaste. The strong flavor contained notes of rice and vinous alcohol. thedm	2.8 Tozai Well of Wisdom Honjozo Sake This bottled Sake from a bottle shop poured a head of frothy medium sized clear colored bubbles that were very quickly diminishing and left behind a uncarbonated transparent clear colored body and no lacing. The mild aroma was nail polish. The vinous mouth feel was weakly tingly at the start and at the finish with a lingering vinous aftertaste. DrSilverworm	3.3 Tozai Well of Wisdom Honjozo Sake 750ml bottle, served chilled. Nearly colorless, translucent body. Just a slight hue of yellow. Pretty nice, ricey, more potent aroma. Like rice pudding. Medium-plus body, a relatively light body compared to beer of this strength. No carbonation. Moderate sweet taste, some alcohol warmth. I’ve never been much of a sake aficionado, but this seems like one of the finer sakes I’ve tasted (and my first honjozo). A delicate, well-integrated flavor, with a nice rice pudding finish. The silk and banana pronounce themselves when indulging in spicy and salty food. The rice base helps calm down spicier food yet this saki still has a great characteristic on it’s own. Ernest	2.9 Tozai Well of Wisdom Honjozo Sake Bottle. No head (still). Body is light yellow. Aroma is notes of grain/rice, alcohol, mold, light note of melon rind. Flavor is moderately sweet, lightly to moderately acidic. Finish is lightly to moderately sweet, lightly to moderately acidic, lightly bitter. Medium body, watery/silky texture, no carbonation, moderately alcoholic, lightly astringent. Overall ordinary. More color than most. Very plain, typical sake aroma of wet rice and old moldy shoes. Flavors arent sweet but are a bit bitter...lacking in any tangible fruit notes unfortunately..not sweet either...just kind of bitter fungus...nothing really sticks...just kind of a messy alcoholic fungus. damn it...I was reading ratings while i purchased this and the higher rating people freaking lied, especially about the sweetness, which this lacks altogether...and it really needs some sweetness to round out that funky alcoholic fungus deathtrap. BückDich	3.2 Tozai Well of Wisdom Honjozo Sake Bottle: Pours a golden hue with a light greenish essence through the light. Nice quaint legs and a sturdy looking body. The nose is dry with a smug light koji note and some faint butter and almond notes. The flavor has nearly no alcohol impact with a light doughy mouthfeel, some butter and banana notes with light melon and maple. Not that clean, but not dry and harsh with the koji like most. Pale yellow-gold, clear and still; like a very light white wine....lovely mild coconut-almond, vaguely ricey nose, no alcohol detected at first, faint floral notes....the body is moderately sweet, lightly alcoholic, becoming semi-dry and lightly bitter/harsh at the finish; a touch buttery-cookieish, just a bit syrupy....very full and perhaps even "heavy", a bit much to make drinking a whole bottle feasable, but on the whole a pretty decent sipper. Beerlando	3.5 Tozai Voices in the Mist Nigori Sake Served shaken and chilled. Milky, cloudy, greyish-white body. The surface shows a faint appearance of a slightly oily film. Scents of light melon, coconut, Irish cream, and lemon make for an appealing aroma. The flavor starts out light and creamy, with ample coconut sweetness. Tart lemon adds a nice balance to the typical Nigori sweetness. The alcohol is detectable, though not unpleasant. The bittersweet finish is long and slightly drying. Smooth, average Nigori palate. ClarkVV	3.5 Tozai Voices in the Mist Nigori Sake Bottle drunk on 3/10/07 Typical nigori color (milky white), with no head and moderate legs left on the glass. Medium amount of sediment overall. Much more lightly-fruited aroma (and flavor) than other nigoris I’ve had. Dosent have as many dull rice husk and coconut-like notes, but in place seems to almost have a citrus and passion fruit-like zestiness. Lots of some type of tropical fruit, anyways. Not as thickly creamy-sweet either, leaving more of a perfuminess to linger. Medium-strong aroma, to boot, with light alcohol nuances, but quite controlled for its size. Very impressive flavor is full of nectarine and tangerine fruitiness, with softly stinging alcohol underneath. Pineapple-coconut is reserved, relatively speaking (it’s always going to be quite prominent) and allows the esters to really come alive. The mouthfeel was wonderful as well, and I fully agree with Jjpm74 that it didnt have nearly as much graininess as many other nigoris. This made for a more fluid, traditional sake-like mouthfeel (though dont get me wrong, it’s still unfiltered). BückDich	3.8 Rikyubai Mukune (Root of Innocence) Junmai Ginjo Sake Completely clear, not a hint of particles or beige tones, very clear. Barely viscous with only a light ring of liquid clinging on the glass. The aroma is very fruity and floral with notes of banana nut bread and lots of earthy qualities. When warmed this one gets quite buttery. Very complex and fragrant, the yamada nishiki rice has definitely lived up to it’s reputation being this is my first authentic Nishiki Japanese Ginjo. The impact is fairly light with the same aromas that were noticeable wash over your palate. The alcohol is almost non-existent. Makes a 5% beer seem like a heavy hitter comparatively. Lightly sweet but with a dry lingering flavor. The balance between the two is perfect, with this acidity the +2 is truly neutral. Delicious sake, very flavorful but low alcohol notes even with a higher alcohol than most ginjos. Sunday, May 30, 2004
