3.1 Redfish Wout Bier On tap at Brouwer’s. Pours cloudy amber with a huge frothy white head. Aroma is pretty weak. A little bit of dusty belgian yeast and a VERY subtle sourness. Same with the taste- it was listed as a sour, but the sourness was barely perceptible. What was there was a little bit of nutty funk, some candi sugar, and maybe a little bit of banana. The mouthfeel was light and creamy- pretty nice actually. Friday, March 13, 2009

3.4 Redfish Wout Bier I am confused. Apparently it seems that if I add Elysian Wout Bier it will simply become an alias of this beer... Whatever. On tap at Elysian Capitol Hill. This is named for Peter Bouckaert’s son, so it must be the same thing. Anyways, yeasty spice on the nose with hints of clove and banana with a subtle lactic tartness in there as well. Pours hazy yellow gold with a thin head. The flavor is initially sweet and fruity, standard Belgian Ale-ish, subtle tart/sour aspects for the two strains of lactobacillus. Light effervescence, pleasant and drinkable, just nothing spectacular. Saturday, March 7, 2009

3.6 Redfish Double Vision DIPA Draft at BJs in Boulder. Mostly clear dark honey/copper body. Smooth, oily texture, some nuts, some sticky but mellow hops, bready notes, nuts, etc... a little bit of cedar wood shavings as well... there’s a honey orange note that develops as it warms, some sort of fruit cocktail hop combination that seems to work fairly well. Nice, smooth, even mouthfeel. It does have some of this wet bran and bread flavor, but overall it’s quite delicious, and next to Pliny the Elder it actually hold it’s own. 3.8 Redfish Double Vision DIPA Draught, BJ’s Boulder. Head is initially huge, creamy, off-white, fully lasting. Body is light to medium amber. Aroma is moderately malty (cookie, caramel), moderately hoppy (apricot, resin), lightly yeasty (dough), with notes of peach, cantaloupe, mango/papaya, and alcohol. Flavor is moderately to heavily sweet, lightly acidic, lightly bitter. Finish is lightly to moderately sweet, lightly acidic, moderately bitter. Medium to full body, velvety/creamy texture, lively carbonation, moderately alcoholic. Quite a surprise, very tasty and remarkably fruity in the nose. Hop heads may not find enough of the ordinary grapefruit or resin onslaught to be to their liking, and admittedly I would like a little more bitterness in the finish, but overall this is a great example of how double IPAs can be much more interesting when there’s other stuff going on besides raw hops for aromatic appeal. Looking forward to seeing what Chris’s other eponymous brews will be like. Saturday, August 23, 2008

2.5 Redfish Blackalicious Imperial Stout tap. nice looking pitch black. the aroma alerted me early that this might have something in it that i wouldn’t like. smelled like a chocolate popsicle that had aloe vera on it flavor at first was o.k. sweet milky hersheys like sweetness with an blurry hop taste. unfortunately this flavor came into focus. ended up way too herbal & minty for me. the beer was drinkable & far from being bad, just not something i’m into. 4 3 5 2 11 Monday, November 26, 2007

3.7 Redfish Blackalicious Imperial Stout Tap @ Redfish: Poured black with a tan head. The aroma was roasty, sweet and malty. Some notes of dark chocolate and alcohol. The alcohol aroma borders on being too much. The flavor is fairly sweet and lightly roasted. Not much in the way of coffee or chocolate. Almost full bodied and sticky. Some warmth.
