Okunomatsu Adatara Ginjo Sake
Sampled at Hopscotch 2023, pours a clear water colour. Aroma is full of intense black liquorice, root beer, and booze. Flavour is much the same, with tons of black liquorice, anise, etc. It’s alright if you like liquorice I guess.

Okunomatsu Formula Nippon "FN" Sparkling Sake
Bottle from the lcbo. Pours a hazy white with a huge champagne like quickly dissipating head. Aroma is quite nice. Very floral, some apple and pear. The carb is quite nice, does a great job to cut the alcohol. Finish is sweet, nice rice flavours, more pear and Apple. Nice.

Okunomatsu Tokubetsu Junmai Sake
Small pour, perhaps 375ml at The Greenbrier’s In-Fusion restaurant. Poured a mostly clear color, light off-translucent notes to it. Light rice wine notes, touch of light sweetness - touch of melon. It’s not overly sweet. It has a decent smooth character to it which is nice and easy to drink. Went well with dinner.

Bottle. Clear water-like pour. Slight citrus but mostly floral and banana with some vanilla. Surprisingly light body, given the aroma. Almost too watery and light with a slight sweet and acidic finish.

Sampler at Ebisu - Cranston, RI. Solid, wafty grain aroma. Of the three sakes I had this was in the middle for dryness and low on the floral qualities. It was clean, plummy and balanced, but not exceptional nor particularly exciting. Straightforward, mostly dry and light sake.

Glass as part of opening "set" of sake. Pours clear with mild aromas of melon, pepper, and rubbing alcohol. Tastes clean and crisp. Also get some pepper, herbal, honeydew and peach. Slight alcohol heat on finish.

720 ml bottle. Clean, fresh nose, rice, koji, cedar dust, pepper, citrus fruits, peaches. Shiny and oily. Clear. Somewhat sweet, ricey flavor, light vanilla, peach and melon, pepper and alcohol. Clean, full, tasty yet light and easy to drink. Very fruity and tasty. A great all-around drinker!

swing top bottle from 2004 via tony yung. sampled in 2008. pours milky and slightly carbonated. not oily but it does have some viscosity to it.... and lumps of yeast... cool. the aroma and flavor remind me of honeydew melon sorbet... cukes, melon, flowers, vanilla and some lemon peel. it has low carbonation but i know it has been sitting for a few years. gritty texture and a medium pus body. neat, but i don’t know that it was worht the $120 he spent on it! 7/5/7/4/16

this is sake that is very light in color and palate but the flavor with smooth and wonderful with nothing over-barring nor underwhelming. there is only a slight bit of grass but otherwise it a true drinking sake.

The aroma is light and ricey with alcohol and coconut. The appearance still and clear. The taste was like the aroma. The palate was thin but good. Overall pretty easy to drink.

Okunomatsu Tokubetsu Junmai Namachozo Sake
Bottle: Pours a beige color as most highly filtered but uncharcoaled sakes. The nose is dry with notes of mineral, rice and banana. The flavor has a mellow impact, light acidity and a meaty body with light umami. Fairly clean and balanced; a long tail with a pronounced earthy character that I find very gamey and enjoyable. Aged nama maybe? Fun.

(at piranha’s in the Arlington Highlands) Clear slighty viscous still with excellent coating of the glass. Nose of subtle pineapple, rice, peach, and melon. Taste of dry rice, mildly hot alcohol, peach and honeydew. Smooth finish, pleasing alcohol heat warms it up a bit. Quite dry.

Bottle. Transparent. Rich licorice aroma and flavours. In the mouth surprisingly drier and more herbal, but the the heavy junmai body rules. Enjoyable night-cap.

From bottle at Koto Japanese restaurant, Helsinki. Quite transparent. Deep aniseed junmai aroma with a hint of yeastiness. Licorice flavours, herbal, almost grainy texture, quite dry in the mouth. Full-bodied. Nice.

Uploaded a picture. Pours with a clear body and strong alcohol legs. Aroma has vanilla, banana and maybe some butter in it. Taste is leaning towards rough alcohol. Syrupy mouthfeel, but not too smooth.

Drinked cold, courtesy of oh6gdx. Clear. Fruits and rice in aroma, nose is even a bit similar to some slivovitzas. Smooth, soft palate. Rice is dominating flavor, but it has pleasant apricot fruityness. Propably even better when warm.

Clear and just a hint of pale green in this otherwise colorless sake. Aroma of fennel, alcohol and koji as well. A bit of an oily feel. Flavor an interesting mixture of earthy, wet hay and black licorice. This is a +5 (Karaguchi) Not a top shelf sake but quite drinkable.

A gift from my sister-in-law that I’m certain was supposed to be shared with geth_in_beer, but that somehow ended up in my luggage... I owe you one Geth. Very pale almost colourless sake. Very subtle fruity aorma, a light melon and custard aroma along with some peppery ethanol. A light solventy character that is fairly unappealing, especially as the sake warms up a little bit. Very thin as well as some late grassiness. Meh... not all that great.

Okunomatsu Tokubetsu Junmai Namachozo Sake
Bottled. Cold@about 6 C. Crystal clear waterlike looks. Aroma is floral, buttery, slightly alcohol and rice. Flavour is very smooth compared to other Sake’s I have had. Quite buttery and alcoholic, but at the same time some spicyness also. A really smooth, and mouthfilling palate.

Warmed up to about 40 C. Still the same looks, as for the flavour the alcohol becomes a bit more aggressive in the flavour. Otherwise quite much the same like when cold. Still pleasant and full.

Small 180 ml bottle. (room temp) Clear with hints of melon, grain and alcohol. Warm alcohol up front with a sweet grainy flavor, a bit of alcohol burn but not overwhelming. As the "Karaguchi" implies, quite dry. Thin and rather simple, a straightforward futsu-shu.

180mL Cup drank on top of a garbage can in front of a 711 in an alley in Roppongi with TimE and Capa!: Clear, nose of bright rice and alcohol. Yeasty flavor and a super deserty dry mouthfeel. A thick artificial body with too much minerally notes. Meh.

Bottled. Colour is clear seethrough, no head. Aroma is quite fruity along with some hints of alcohol. Flavour is much more complex, rice, some slight caramel, fruits and some stinging alcohol. Very pleasant in my opinion.

Crystal clear, like a glass of pure spring water. A fresh, floral scent, light koji. Nice feel, slightly thick and buttery. A mild sweetness up front with nutty then a peppery middle, earthy and warming in the follow. A smooth and flavorful sake. Might be a bit much for the beginner but great for those that have tossed their sake "training wheels" out already.
