COMMERCIAL DESCRIPTION
Back in February of this year, we added several hundred pounds of raspberries to oak barrels containing mature sour beer. We then allowed the beer to re-ferment to dryness. The result is Atrial Rubicite, our first barrel aged sour beer to incorporate fruit. Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria, and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

UPDATED: MAY 5, 2024 Аромат весьма резкий, кислый, уксусный, лимонный, яголный, прежде всего малинный, цвет тоже малинового морсика, пенки почти нету. Вкус дико кислый, прям сводит скулы, много как будто уксуса, или чего то схожего как уселителя, конечно малина, сильная яркая, свежая и кислая. Кислота при глотке еще сильнее, прям лимончик местами, очень терпко, намеки на вино. В целом сильно и кисло.

UPDATED: NOV 22, 2023 Super funky. Thick dank funk. Berries hidden there in the funk. A hint of bread. Pours ruby red with a huge super fuzzy pink head that fizzles down quickly to almost nothing. Thick chewy mouthfeel. Very dry. Tart. Funky. Lots of berry flavor. Really nice.

UPDATED: SEP 22, 2023 500ml shared with Phill @ Ryan's. Blend 9 from April, 2019. Appearance: nice very dark purple with a rose head. Aroma: quite heavy and dry moderately acidic raspberries. Taste: along the same lines, not super acidic. Overall: it held up pretty nicely, especially for the beer with raspberries.

UPDATED: SEP 22, 2023 Poured from 500mL bottle (blend 9; April 2019 vintage). Dark purple red with small pink-ish white head. Tons of raspberry on the nose. Perhaps a little bit old so the raspberry doesn't come out as much on the taste, but very good. Have never been a big fan of Jester King (thought it was overhyped), but now I begin to understand why people love it so much.

UPDATED: SEP 9, 2023 Draft at brewery. Pours ruby red with a purple hues head. Leaves some lacing in the glass. Lots and lots and lots of raspberries on the nose and tongue. Has a nice amount of tartness and funkiness and dryness as well. Definitely one for a special occasion like making it to the end of the night.
