Dieu du Ciel Solstice d’Été aux Framboises
Bottle 341ml, a cloudy red beer with pink head. Nose is on strawberries and raspberries with the typical fresh yogurt touch in the background. Taste is quite acid, the acidity we can have in the skin of small berries, light sourness. Aroma is on red fruits, lactic, metallic, cooked vegetables. Very long acid / red berries aftertaste.

Dieu du Ciel Sentinelle
Un nez assez discret, des céréales et une présence houblonnée assez faible. Un goût de malts et de houblons aux nuances d’épices et d’herbes et/ou de gazon. Une bouche un peu molle et une texture à la fois aqueuse et huileuse. Une finale poivrée assez longue. Je ne suis pas un expert en kölsch et je ne veux pas le devenir. Ce style peut être intéressant mais il m’endort en tabarnouche. Anyway, l’Allemagne ne m’allume pas trop et ma vie va très bien malgré cela. Ceci dit, j’accueille une bière de Dieu du Ciel! toujours de la même façon: je suis toujours content de boire une nouvelle création de cette maison d’exception.

Dieu du Ciel Solstice d’Été aux Framboises
Pours clear, yet deep red. No head. Smell is very intense fruity. Taste is strong and sharp sour, with a very very dry mouthfeel, yet a bomb of fruityness. Talk about an explosive taste ! the beer ain’t balanced by far , as it builds up between extremes that are not extreme in a good way ( too sharp sourness, too dry, probably not that natural as I’d like to think it is ) yet the taste itself aint bad !

Dieu du Ciel Exorciste Sauterne
Bottle from the most recent Ddc bottle release A: citrusy, a touch of barnyard, sauterne is there but is relatively subtle, some vanilla and tropicaliness coming through as well. App: clear pale smallish white head some lacing. T/p: thin body with moderate long acidic finish. Moderate high carbonation. O: A nice rendition of this already great beer. The barrel aging added a nice complexity and blended well with the rest of the elements. I use to have a bad perception of beer aged on sauterne cause they were too in your face and I would simply skip it thinking that this type of barrel wasn’t for me. I’m glad to say that Ddc open up my mind that great beer could come of such barrel aging.

Dieu du Ciel Rosée d’Hibiscus
Brown bottle, 330ml. Pours ruby red with a thin white head residing as a ring. Scent is dense sort of rose candy flavor. Light pale ale I think. Taste is consistent flavor and what seems to be cinnamon or ginger bread. Mouthfeel is dry like grapes, surprisingly so and a nice sour. Excellent.

Another revisited DDC beer. Black pour, good sized mocha head. Thicker body and good lacing. Vanilla and dark chocolate up front in both the aroma and taste, light booze (which works well here), charred malt. Slick oily mouthfeel. Drinks far bigger than the stated 6% and change.

Pink pour, smaller head that fizzes out fast. Hibiscus and more hibiscus in the aroma, almost perfumey. Hibiscus dominates the palate as well, though I do get a bit of raspberry and a bit of what in there as well. Lighter body with a slightly spicy finish (thank goodness). OK for what it is, but those looking for a better beer with hibiscus drive about 2 hours southeast and thank me later.

Drank most of a 341 ml. bottle @ Beerlovers Bar. Bright citrus golden, massive quickly collapsing white bubbly head. Nose is super thick brett, this stuff is milky, lactic lemon, massive brett, zest, lightly metallic, esters,…. Excessive in the brett for me. Taste is massively milky zest, mineral, extreme brett, zest, esters, wheat, lemon, pepper,… lively brett & milky body. Really excessive on brett. Almost a bit like a strange Berliner or something like that due to the lactic lemon qualities & weird funk. Too much for me, Hill Farmstead fanboys would call it balanced.

Straw/pale gold pour with a steamed milk cap. Nose is cereal and hay and grassy, spicy hops. I’m no expert, but this seems to be a fairly true example of the style. Pale malt, discernible noble hop bitterness, minimal yeast presence, light mineral content, and a palate I would consider "crisp". That being said, how the hell am I ever supposed to be blown away by a style that is, by definition, fairly boring? Beer nerds get all uppity about whether something is a true Kolsch or not, but at the end of the day, I don’t care what you call it, as long as it’s good. This stuff is good.

bottle @ Keg Liquors / Clarksville IN --- Aroma of malt and bitter floral. Cloudy medium / dark amber, off-white head that sinks quickly to a cover, mottled curtain of lace. Taste is Semi-sweet caramel malt that adds solid carbonation on the swallow before revealing yeast and mild floral hops that drift through a long finish. Big and bold, but still light in the belly. Solid brew.

bottle @ Keg Liquors / Clarksville IN --- Aroma of toasted malt. Opaque black color, cool tan colored head that quickly shrinks to a thin cover, sheets of lace. Taste is toasted malt that coasts through a lightly fizzed swallow to chocolate bittering. The sweet tries to hold on, but the hops win easily at the end. A full-bodied, complex brew, leaning toward general bittering, but quite easy to drink.

This gold-coloured Belgian witbier pours with a small white head. Both the juniper berries and lime are evident in the bouquet. It has a spicy almost peppery flavour and the juniper berries are evident in a somewhat gin-like finish. It’s interesting and enjoyable in small amounts.

Dieu du Ciel L’Herbe à Détourne
Bottle bought @ Systembolaget. Pours hazy apricot with a big frothy fluffy goldenish white head that slowly dissipates while leaving lots of thick sticky trace on the glass. Smell is fruity and tiny spicy with crackers, white bread, baked pears, canned peaches, tangerines, grapefruit juice, moist grass, dry soil, white pepper corns, orange zest and hints of alcohol. Taste is slightly sweet, bitter, fruity and spicy. Mouthfeel is round, slightly astringent, slightly boozy and medium bodied. Finish is tiny sweet and bitter with grapefruit, yellow tropical fruits, white pepper corns and alcohol. Bottled in March and I suspect this would have been even better back then. That aside the hops still provide plenty of fruit. Bit bitter and boozy perhaps but fighting off the last of a summer cold this was perfect to awaken your senses. Cool blend between triple and IIPA. Reminds me a lot of that Chouffe beer...

Bottle from Appellation Wines. Appearance - bright orange to red, almost lava, in fact. Decent head which didn’t quote hang around long enough. Nose - sweet floral, perfume notes. Hints of Turkish Delight. Red berries. Taste - sweet berry and orangeade. Palate - close to medium bodied with a creamy yet tangy texture and a finish that could be fresher. Overall - interesting but a bit too sweet on the finish.

Servie d’une bouteille à un verre. Bière noire (noire), la lumière ne passant même pas à travers. Collet beige ayant disparu. Nez extrêmement sucré : vanille et chocolat prédominent. En bouche, le sucré du chocolat et de la vanille est extrêmement bien balancé par l’amertume du houblon et du cacao. Finale longue et amère. Drank from a sample glass, poured from a bottle, shared amongst friends. Pours black with nice little tiny head bubbles. This beer had a very odd mid flavor, that was just completely bland. Once the beer warmed up a bit that bland flavor gave way too some nice vanilla goodness!
