yngwie	4.1 Dieu du Ciel! Péché Mortel - Bourbon (2022) Bottle. An unclear brown to black beer with a small dark beige head. The aroma has a delicious coffee, mocha aroma, along with a good boozyness and roasted malts. Some toffee, oak, spices and a piney hop touch. It's full-bodied, warming and softly carbonated, with flavors of roasted malts, coffee, some dark chocolate, spices and bourbon. Oak, spices and a touch of toffee. Alcohol notes. Lasting finish, where some soy sauce blends in with all the other goodies. Quite delicious this one, sure showcases coffee in beer, and the effect of barrel aging. 240421 Sunday, April 21, 2024

Metalchopz	3.7 Dieu du Ciel! Limonade Rosée Fairly clean, peach-pinkish colour with a fizzy off-white head leaving a little ring around the brew. Real citrus lemon juices, zest showing in the nose with pink grapefruit blending the fruitiness. Hints of cherries in the finish. Again, feels like real fruits in the taste, not syrupy, but zesty, somewhat drying the end. Quite refreshing, fruity - a real good Radler-style beer. Monday, April 15, 2024

Taste is dark roasted malt, some coffee, wood, vanilla and lots of Bourbon. Fine body with Bourbon boozed dominated aftertaste. ClarkVV	4.2 Dieu du Ciel! Wild Ultra 500mL bottle, batch 6, bottled 3/24/2023, drunk 3/29/2024. Clear, deep brass-bronze with a touch of amber. Very large, yellow-tinged head shows strong retention. First impressions are a bright, hoppy, brett-laden pale ale with mellow oak and mellow cultures. Some easygoing lemongrass and light pine from the Mosaic but it's mostly culture, malt and oak. Clean and bright. Brett-forward with a good interplay of moderately bitter, lightly spicy hop character. Great base malt, mellow oak tannin contribute substantial body and it's well-attenuated with biscuit and bread-like flavors. Mild lactic acidity with fruity, tart Brett. Just an all-around bright, mellow, flavorful beer that is polished and shows no flaw. Friday, March 29, 2024

Dark red label with a drawing of some kind of bird devouring all sorts of things. Pours opaque dark brown with a mid-sized beige head. Stable. Settles as thin but unbroken layer of foam just covering the surface of the beer.Substantial lacing. Aroma is intense with a light sweet and malty odor soon overpowered by distinct earthy fumes and a scent of dark alcohol. Toffee caramel and bread. Tobacco, leather and wood. Bourbon. Light carbonation. Medium thick, oily, soft, greasy, lightly tingling texture. Flavor is intense with a medium strong sweetness followed and balanced by a slightly stronger boozy bitterness. Aftertaste is bitter with a prominent sweet and alcohol-laden sweet undertone. Lingering. Finish is dry like a shot of Bourbon. Powerful rich and earthy Barrel Boozer. Wednesday, March 27, 2024

fiery1	3.5 Dieu du Ciel! Dernière Volonté (Raisin De Glace) 500ml bottle @ home[Bottled 24/02/2023]. Pours a clear golden colour with nearly no head. Nose is oak, wine, and hints of funk and cheese. Flavour is weird, it's got a Belgian yeast character, a mild wine aspect, some funk, a grape skin tannic quality, finishing with a booziness. Medium bodied, good carbonation, and a mild sweet with a boozy fermented grape character. I don't hate it, but I'm not loving it. Tuesday, March 19, 2024

Fair bit of oak, some funk, feint cheese, very mild ice wine note underlay. Slightly odd combo, but it's decent. Not a huge fan of Derniere Volonte, but this is my favourite of the variants thus far. Ik ruik een aroma van koriander, gevolgd door citrus en een brood-achtige geur. De koriander is dominant aanwezig. Ook in de smaak overheerst de koriander. It's full-bodied and quite dry on the palate, though with some sweetness. Nicely carbonated. Coffee in the flavor too. Roasted malts, brown sugar hints, toffee, dark chocolate and a boozy, lightly woody touch. Lasting finish.
