Is it right? Seems a bit excessive really. But we did it anyway, because we can. We have aged our Tongue Buckler Imperial Red Ale in bourbon barrels and it is ready to drink. Yep, that 10% ABV monstrosity has been, as they say, kicked up a notch.
It was a quick stay in the barrel. We didn’t want the beer to lose all of it’s hallmark hoppiness. And after only a couple of months, a lot remains. Flavors of vanilla and oak now intertwine with the malty sweetness and are countered by a pronounced hop bitterness. What was complex is now impossible to unravel. It really has to be tasted to be understood.
