#29. Brewed for Elysian Great Pumpkin Beer Festival 2012. We brewed this “Nightowl North of the Border” with our friends from Beau’s All Natural Brewing in Vankleek Hill, Ontario. They came and brewed with Steve at Elysian Fields, and Dick made the trip north to help with the brew there (his wrist is still sore from opening 280 cans of pumpkin). Oiseau de Nuit is an unhopped pumpkin gruit, flavored with Canadian bog myrtle and yarrow and roasted cumin seeds. 55% Munich malt, 31% pilsner malt, 8% Cara-foam and 6% Cara-Munich malt–all organic–went into the mash.
