Enterobacteria is a family of bacteria that includes many of the most common human pathogens, such as Salmonella and E. coli, and are named for their presence in the animal gut. In beer, these bacteria are most often found in sour, spontaneously fermented products where they feed on available sugars and produce a range of flavors including honey, butter, cooked vegetable (dimethyl sulfide) and fecal aromas. Enterbacteria are Gram-negative.
