davidezdonz	4.1 De Dolle Stille Nacht Reserva 2019 Barrique 10 A 750ml bottle, brewed in 2019, bottled in 2023, poured into a Tilquin stemmed glass. It was a lightly hazy golden orange colour with a big two finger white head that dissipated fairly quickly to a thin cap, while leaving fluffy lacing. Aromas of oak, barrel, vanilla, fruit cake, lemon zest, lime, candied orange, white wine grapes, damp wood, with a touch of funk. Tastes very lightly sour and tart, oak, vanilla, lemon zest, lime, candied orange, damp wood, and light funk. Medium to full bodied with moderate carbonation. Overall, an enjoyable sipper with strong barrel character and good complexities in both aroma and flavour. Monday, May 6, 2024

Sweet, boozy, malty, yeasty, caramel aroma. Tastes sweet, malty, sherry, yeasty, caramel, some dark fruit. This has held up incredibly well, believe it was cellared in a bar somewhere in Aalst. mcberko	3.9 De Dolle Stille Nacht Reserva 2021 330mL bottle, pours a hazy muddled orange with a very tiny white head. Aroma brings out a complex vinous character upfront, with a nice Belgian yeast profile, a touch of candi sugar, light esters, and gentle red fruitiness. Flavour is very complex, with a wonderful, intense vinous character some resulting wine-like tartness, gentle fruits, subtle spicy phenols from the Belgian yeast, and fairly low residual sweetness that's outdone by the wine and tartness. The carbonation is flat, which seems suboptimal here. Great flavour complexity, but I think the flatness doesn't allow it to reach its full potential. Still, excellent. Monday, March 18, 2024

Alengrin	4.5 De Dolle Stille Nacht Reserva 2021 This is to date the most recent barrel aged (‘Reserva’) edition of Stille Nacht, Dolle Brouwers’ legendary Christmas ale, and the first one to my knowledge to appear in 33 cl bottles instead of 75 cl ones… Aged for two years on barrels which once held red wine. Open, off-white, tiny-bubbled, thin head on an initially clear warm peach blonde robe with lovely orange glow, turning hazy and more brownish-tinged with sediment. Rich bouquet of peaches soaked in brandy, sweat, wet oak wood, overripe pineapple, fermenting apple juice, marmalade, hints of ripe persimmon, acacia honey, chicken stock, vanilla, piccalilli, tawny port and stewed cherry tomatoes. Sweet, fruity onset, estery with lots of pineapple, apricot, persimmon and peach, even ripe Doyenné pear, white grape and lychee; mild sourish undertone, only accentuating the fruitiness. Carbonation remains soft (though not flat), the mouthfeel is full, rounded and vinous, with lovely biscuity, lightly caramelly and brioche-bready, soft malts. Lots of this fruitiness, amplified by the grapeyness that remained in the barrels, is carried onwards to a rich, colourful, vibrant and long finish, in which gentle tannic woodiness and oaky vanillin accentuate the overall complexity; warming port- and somewhat brandy-like alcohol ensues, while all these colourful fruits continue unabatedly. A truly excellent and classy sipper, after – in my view – a few (somewhat) lesser editions with even an acetic bottle here and there, the original glory of the older Stille Nacht Reserva vintages seems to have been rediscovered. Doubtlessly develops even more complexity with age, too. Absolutely delish – I am mouthwatering even by thinking of it again. Wednesday, February 28, 2024

davidezdonz	4.1 De Dolle Stille Nacht Reserva 2010 A 750ml corked and capped bottle, produced in 2010, poured into a Tilquin stemmed glass. It was a very nice clear orange copper colour with a one finger beige head that dissipated fairly quickly to a ring around the glass while leaving some lacing. Aromas of fruit cake and blackcurrant oxidation, with sweet caramel, toasted oak, and candied citrus zest. Tastes sweet fruity, dried red berries, lightly red wine vinous, candi sugar, candied dried orange slices, honey, caramel, oak. Full bodied with moderate to soft carbonation. Overall, despite the oxidation, this was an enjoyable sipper with nice balanced complexities within the flavour. Thursday, February 15, 2024
Alengrin	4.5 De Dolle Dulle Teve Reserva 2023 (Trousseau du Jura) Officially the third Reserva version of Dulle Teve, Dolle’s tripel, to date, in very limited quantities as only one single 225 l barrel was used (equalling 300 bottles of 75 cl, crown-capped); this barrel was delivered by a friend of the brewery and previously contained Trousseau wine from the Jura region in eastern France. Bottle from the brewery. Off-white, large-bubbled yet stable, moussey head, slowly thinning and lacing in shreds, misty orangey-glowing peach blonde robe with steady visible sparkling, a treat to the eye; turns into a cloudy orange-veiled beige in the end. Rich and stunning nose of ripe red apple (especially in the end), peach yoghurt, ripe nectarine, oak wood, rosé wine, fresh orange and marmalade, cantaloupe, ripe persimmon, purple gooseberries, cream, red wine, orange water, sweat, biscuit, fresh cranberry juice, damp tree leaves, aged game. Brightly fruity, even juicy onset, lots of red apple, ripe nectarine, orange and melon, even red grape; softly sour gooseberry effects too, a bit lactic and yoghurty further on but remaining very radiantly fruity and supple. Lots of grapey effects too, over a firm but elegantly smooth caramelly, bready and biscuity malt structure, carrying the fruitiness further to a rich finish in which herbal elements (fresh thyme, cinnamon even) appear as well, spicing up the continuing melon, persimmon and grape fruitiness. Hop bitterness remains delicately floral but has its function partially replaced by woody tannins, accentuating the vinous character of this beer. Sour-sweet fruitiness lingers in a most brilliant, balanced way. What a treat – this is truly unique, but also utterly tasty, like only the best of Dolle’s Stille Nacht Reserva editions; the orange fruit and more ‘animalistic’ accents (the first very strong and dominant, the latter very subtle and background) must come from the Trousseau or are at least heavily amplified by it. In any case this new and very limited Dolle beer is the best proof I ever came across that ageing the old Belgian tripel style on wine barrels holds enormous potential. Get them while you can. Alengrin	4 De Dolle Dulle Teve Sour - Valentijn Edition Deliberately soured version of DDB’s classic tripel Dulle Teve, created as a one-off experiment in one single keg only, sold as long as stocks last in the brewery bar and referring to Valentine’s Day taking place tomorrow (but given the extremely low production volume, I would not even be surprised if it is already sold out by then…). Snow white, bit irregular, breaking but generally edge-retaining, shred-lacing head, clear apricot blonde robe with orangey glow and quiet sparkling. Aroma of ripe nectarine, white dessert wine, fruit yoghurt, tangelo, soggy white bread, cantaloupe, hints of prosecco, apricot, young mugwort, damp earth. Brightly fruity onset, juicy and lively even if no actual fruit was used – bursting with impressions of ripe nectarine, pear, melon and white grape, with a touch of orange underneath; smooth mouthfeel, feeling lighter than it is, with minerally and somewhat stingy carbonation effects and a supple bready and lightly biscuity malt core, all gently and elegantly soured, a mellow tartness only accentuating the grape, orange and melon fruitiness in this beer. Ends with ongoing fruitiness mitigated only lightly by a delicate floral hop bitterness and warming, calvados-like alcohol – remaining equally bright and radiant as in the beginning. Gracious, easily drinkable (even dangerously so at this strength), with a ‘friendly’ fruit-yoghurty sourness to it which has indeed lifted up the already juicy character of a fresh Dulle Teve. This experiment really deserves to be continued – and more broadly exposed! Tuesday, February 13, 2024

Lots of floaties stuck in the neck of the bottle. Aroma is very funky, red wine, cider, vinegar, leather, dried fruits, pepper, bananas. Pungent. Medium body, sticky texture, average carbonation, sour finish. Taste follows the aroma, with some chocolate and berries. Fantastic. Monday, February 5, 2024
janubio	4.7 De Dolle Stille Nacht Reserva 2018 75 cl. bottle from Be Hoppy, barrique nª 134, served at home in an Oerbier glass. Copper colour, medium head and retention, average lacing. Aroma is mostly red wine, grapes and oak, but after a while you can feel marzipan, vanilla, dust, barnyard, acid apples, ripe fruits, and some other things that I can't identify. A bit phenolic. It reminds me of some lambics. Medium body, sticky texture, average carbonation. Bitter finish. Taste of red wine, grapes, oak, marzipan, acid apples, oranges... everything that is in the nose except the phenolic part. Wonderful, but, for the price, I prefer the usual one. pindolaire	4.9 De Dolle Dulle Teve 10º (Mad Bitch) Servida y disfrutada en copa Edimburgo, color oro anaranjado, turbia, espuma blanca de media-alta retención. En nariz lo primero a destacar de ella son los tonos afrutados, sublime, recuerdan a un buen vino blanco con uva de calidad (Chardonnay, verdejo, Sauvignon...), buena presencia de levadura, y especias. En boca cada sorbo despliega una interesante variedad de matices en el paladar, notas frutales (uva, pera, cítricos), malta, azúcar candy, especias (pimienta, cardamomo)...Ligeramente dulce y moderadamente amarga, final seco, embriagadora. Aroma predominante a cereales y pan, junto con notas florales, fruta muy madura, y levadura. En boca, textura ligeramente densa, de carbonatación media y amargor que perdura en garganta. Marcado sabor a cereales y levadura, con un final dulzón que recuerda a frutas de hueso maduras. Una Strong Ale belga muy equilibrada y sin defectos, pero a la vez sin nada a destacar. ludos68	4.5 De Dolle Stille Nacht La birra si presenta ambrata con un cappello di schiuma bianco non eccessivamente persistente. Al naso l'aroma è intenso, caldo, complesso ed avvolgente, con fragranze fruttate (pera, mela cotogna, uva passa, albicocca e banana), agrumate (scorza d’arancia), speziate (zenzero e chiodi di garofano) di caramello, frutta secca (fichi, prugne e mandorle), zucchero candito, lievito belga, datteri canditi, miele, malto chiaro e leggeri toni legnosi e resinosi. Corpo pieno, denso con consistenza quasi oleosa, carbonatazione media. Calda, morbida e setosa al palato dove si viene accolti da una sapidità abbastanza dolce con note maltate, speziate, di frutta sotto spirito, caramello, frutta secca, lievito, zucchero candito con una decisa alcolicità che sigilla il tutto in maniera straordinaria, arricchita verso la fine della bevuta da un accento erbaceo-resinoso da luppolo che va a completare l’immenso bouquet gustativo. Piana biała, średniej wysokości, średniopęcherzykowa, opada do ostatniej warstwy, pozostawia lacing. Aromat: Na pierwszym planie, na średniowysokim poziomie estry: przede wszystkim morela, ale także jabłko, gruszka i trochę agrestu. Dalej średnie pieprzowe fenole wzmocnione średnioniskim perfumowym alkoholem. Całość uzupełniona średnioniską słodowością chlebową, jasnego miodu, białego cukru. Smak: Fenolowo – alkoholowo – słodowy. Na średniowysokim poziomie gładki, perfumowo - pieprzowy alkohol wzmocniony pieprzowymi fenonalami, zbalansowany słodowością chlebową, herbatnikową, lekkiego jasnego miodu i białego cukru na podobnym poziomie. Na drugim planie średnie estry o charakterze agrestu, moreli i gruszki. W ustach półwytrawne, treściwość średnia – gładka i całkiem pełna; wysycenie średnie oraz średnie rozgrzewanie alkoholowe.
